Job Summary:

Ethan Allen is seeking a highly motivated and experienced Banquet Chef to lead our culinary team in providing exceptional dining experiences for our guests. As a key member of our hotel's management team, you will be responsible for overseeing all aspects of banquet operations, including menu planning, food preparation, and presentation.

Key Responsibilities:

  • Train and manage kitchen personnel to ensure high-quality food preparation and presentation.
  • Estimate food consumption and requisition or purchase food to meet banquet needs.
  • Select and develop recipes to meet the hotel's culinary standards.
  • Standardize production recipes to ensure consistent quality and presentation.
  • Plan and price menus to meet the hotel's budget and culinary standards.
  • Ensure proper equipment operation and maintenance to prevent downtime and ensure food safety.
  • Oversee special catering events and offer culinary instruction and/or demonstrate culinary techniques to staff.
  • Supervise kitchen personnel with responsibility for hiring, discipline, performance reviews, and initiating pay increases.
  • Responsible for staying within specified budget and ensuring that all food costs are accurately accounted for.
  • Inspect equipment before and after use to ensure cleanliness and proper working order.
  • Review prep lists, check daily pars, and maintain pars as necessary to ensure efficient food preparation and presentation.
  • Oversee inventory of stations, control quality of food, avoid waste, and ensure proper rotation and utilization.
  • Train employees to keep up with company standards and new changes.
  • Check all food for proper consistency, temperature, and flavor.
  • Monitor overtime and coordinate workflow to ensure a smooth-running operation.
  • Ensure the kitchen is clean and kept neat according to health department standards, and supervise dishwashers and other cooks in their respective duties.
  • Check food orders going out of the kitchen and food being prepared.
  • Review all kitchen staff necessary for any special parties or orders, and follow up on completed work.
  • Monitor employees' performance and issues, discipline when necessary, and handle all necessary paperwork related to this position.

Requirements:

  • At least 3-5 years of experience in a similar role.
  • Ability to stand and/or walk for at least 8 hours a day.
  • Ability to lift 50 pounds.
  • Ability to bend frequently during an 8-hour shift.
  • Ability to read, write, understand, and speak English.
  • Ability to perform repetitive range of motion.
  • Ability to work weekends, holidays, and/or flexible hours.
  • Ability to comply with all hotel policies and procedures.
