Job Summary

We are seeking a skilled Butcher - Steakhouse Specialist to join our team at Hard Rock International (USA), Inc. This role is responsible for preparing and producing high-quality meats and dishes in our assigned kitchen outlet.

Key Responsibilities
  • Properly butcher meat, fish, and poultry, and prepare and produce all foods/dishes listed on the respective menu/s in an assigned kitchen outlet/s.
  • Demonstrate good knowledge of knife skills and cooking procedures, and execute dishes to the highest standards.
  • Create an atmosphere that induces guests to make Hard Rock Casino Northern Indiana their choice for gaming entertainment.
  • Build and retain guest relations, and act as a mentor to team members to provide superior guest service.
  • Cut and trim meat from larger, wholesale portions into steaks, chops, roasts, and other cuts.
  • Good knowledge of dry aging meat based on HRCNI standards.
  • Prepare all foods/dishes that are based on company standards and recipes, ensuring that all plates or pans served are aesthetically appealing and cooked to the specifications of the HRCNI.
  • Demonstrate good knowledge and knife skills, and use all equipment provided by HRCNI.
  • Good knowledge of using the grill (wood burning, charcoal, gas, and electric grill) to prepare and execute all dishes based on HRCNI standards.
  • Good knowledge of producing a variety of sauces and properly placing them on all dishes, based on HRCNI standards.
  • Keep workstation neat and clean, and assist co-workers to ensure efficient operation of the kitchen.
  • Ensure cleanliness of working area, report all equipment for safety failures, hazardous areas, and accidents, and ensure the proper storing of any foods.
  • Ensure that items are fully stocked, and equipment is in good working condition, and assist with other duties at special events or parties.
  • Attend and participate in meetings, completing follow-up as assigned, and assist other cooks during the food cooking and assembly process.
  • Clean up before shift ends, and clean and sanitize all work areas based on Food Safety rules and regulations, together with HRCNI standards.
Requirements
  • Culinary arts degree or accredited apprenticeship, and 4 to 8 years of progressive food preparation experience with at least 3 to 5 years in a management capacity.
  • Previous experience in a high-quality hotel or freestanding restaurant highly desirable.
  • Must obtain and maintain valid licenses/certifications per Federal, State, and ERGC Gaming regulations.
  • Must successfully pass background check, drug screening, and be at least twenty-one (21) years of age.
  • Must be able to work holidays and weekends, as well as flexible shifts.
