Head Baker Laminator

We are a new bakery in the South End looking for an experienced head baker to join our team. As a key member of the baking department, you will be responsible for laminating dough and shaping Viennoiserie products in the afternoon to be proofed overnight for an early morning bake-off.

Job Requirements

The ideal candidate will have 2 years of experience working in a pastry production kitchen, with a strong focus on laminating dough and working with a dough sheeter. You must be able to work independently and stay on-task, as well as maintain a clean and organized workspace.

Responsibilities
  • Mix and laminate croissant dough using various folding techniques
  • Sheet and label finished dough
  • Shape dough into required shapes to meet par counts for the following morning
  • Identify potential issues with dough before proofing
  • Create unique bicolor products and take advantage of special ingredients
  • Maintain inventory of finished products and raw materials

This role is perfect for someone who is detail-oriented, has excellent time management skills, and is passionate about creating high-quality baked goods.
