Key Responsibilities:
Under the direct guidance of the Executive Steward, the Lead Kitchen Steward will manage the stewarding operations and team during their assigned shift. Responsibilities encompass dishwashing operations, basic evening cleaning, and the receipt and storage of supplies. The Lead Steward will strive to enhance guest and team member satisfaction while ensuring cleanliness and sanitation across all food production and service areas. This includes ensuring that all food and beverage outlets are adequately equipped for optimal performance. The role also involves mentoring and developing the stewarding team while upholding sanitation and health standards. The primary responsibilities include overseeing all stewarding and kitchen maintenance tasks during the assigned shift and within the designated outlet.
- Directs stewarding operations in assigned kitchen areas to uphold cleanliness, sanitation, and adherence to state and local health regulations. Stewarding tasks include setting up workstations, cleaning and storing dishes, managing dish machines, ensuring proper chemical levels, organizing coolers and freezers, and transporting food products and equipment between kitchen areas.
- Educates stewards on current safety and sanitation protocols to ensure compliance with health and safety regulations. Reports any hazardous situations, emergencies, or threats to the safety of guests, employees, or resort assets to management. Ensures that equipment is ready and functional for the upcoming shift's tasks.
- Communicates with supervisors to maintain adequate stock levels of all materials and equipment necessary for the areas of responsibility, including china, silverware, and glassware.
- Fosters teamwork and quality service through daily communication and collaboration with other departments. Key departmental contacts include warehouse personnel, restaurant chefs, food and beverage managers, and bar managers.
- May assist with additional tasks as needed, which may include providing support with food presentation, completing setup sheets, etc.
- Provides guidance and direction to the stewarding team during the assigned shift.
- Shares information with executive teams, managers, supervisors, team members, and subordinates through various communication methods.
- Works towards achieving or surpassing goals set by the Executive Steward, including performance, budget, and team objectives.
- Understands the roles of stewarding team members well enough to perform their duties in their absence or identify suitable replacements.
- Ensures compliance with all food handling and sanitation standards.
- Adheres to proper handling and temperature standards for all food products. Ensures that employees maintain required food handling and sanitation certifications.
- Leads the stewarding team in maintaining kitchen equipment, sanitation, organization, and cleanliness.
- Analyzes information and evaluates outcomes to select the best solutions and resolve issues.
