POSITION OBJECTIVE:


Accountable for the comprehensive preparation, creation, and oversight of all pastry items requested for various dining venues and event functions.

KEY RESPONSIBILITIES:

  • Ensure a superior quality of pastry production and presentation in line with established recipes and/or specifications to guarantee consistency for guests across dining venues and event orders.
  • Exhibit exceptional creativity and passion in the culinary arts, contributing to the design, innovation, revision, and execution of all pastry-related menus.
  • Prepare supply requisitions for ingredients and materials necessary for production in the designated workstation.
  • May be tasked with creating baked goods tailored for specific dietary needs.
  • Conduct visual inspections of all food items to ensure appropriate taste, color harmony, and overall presentation to maintain visual appeal.
  • Oversee proper ordering, receiving, storage (including temperature settings), and rotation of food products to adhere to Health Department regulations.
  • Maintain cleanliness and organization of all refrigeration, storage, and working areas to comply with Health Department standards.
  • Assist in the organization and sanitation of pastry preparation and pantry areas to uphold established stock levels, preparation standards, efficient production, and health code compliance.
  • Supervise culinary personnel within the pastry section, including recruitment, training, performance management, and disciplinary actions.
  • Responsible for station setup, breakdown, and all necessary advance preparations.
  • Analyze food costs and identify the most cost-effective recipes while ensuring quality standards are met.
  • Adhere to cost and quality control procedures.
  • Monitor daily safety and sanitation practices.
  • Provide training and support to bakers and other staff engaged in related tasks.
  • Perform additional duties as assigned, including the development and execution of special events, VIP gatherings, and staff functions.
  • Maintain accurate food production records, reports, and departmental documentation as required.
  • Direct and/or coordinate the maintenance and care of departmental facilities, equipment, supplies, and materials to promote efficiency, health, and safety.
  • Be prepared to work varied schedules to meet the operational needs of the organization, and participate in all training sessions and required meetings.
  • Comply with all policies and procedures of The Marcus Corporation.
  • Attend all scheduled mandatory departmental meetings, training sessions, and corporate meetings.
  • Carry out all other related responsibilities and special projects as assigned.


POSITION QUALIFICATIONS:


  • Any combination of education and experience equivalent to a high school diploma or other educational, training, or experiential background that provides the necessary knowledge, skills, and abilities.
  • Experience in management and pastry production within a similar hotel or resort setting, with 2-4 years in high-volume pastry/bakery operations, upscale dining, and large banquet functions.
  • Detail-oriented with the ability to work independently.
  • Proficient manual dexterity to operate all kitchen equipment, including knives, spoons, spatulas, tongs, and slicers.
  • Knowledge of accepted safety and sanitation standards.
  • Extensive experience with mixers, ovens, food processors, and related equipment.
  • Thorough understanding of food products, standard recipes, and proper preparation techniques.
  • Ability to work in a noisy environment with frequent interruptions.
  • Knowledge of food and labor cost controls, inventory management, and the calculation of these metrics.
  • Basic mathematical skills necessary for understanding recipes, measurements, requisition amounts, and portion sizes.
  • Capability to perform duties in confined spaces and under extreme temperature conditions.
  • Ability to lift and/or carry goods weighing up to 100 lbs. on a continuous basis.
  • Capacity to stand and/or walk for extended periods to fulfill essential functions.
  • Willingness to work a flexible schedule, including days, evenings, weekends, and holidays, while maintaining composure under pressure.
  • Must represent the company in a professional, well-groomed, and courteous manner.
  • Excellent interpersonal, listening, and communication skills, including proficiency in reading, writing, speaking, and understanding the English language.
  • Ability to observe and respond to emergency situations; distinguish product quality, taste, texture, and presentation; and monitor preparation processes.
  • Willingness to pursue any additional training or certification requirements as per The Marcus Corporation's standards.
