SENIOR PASTRY CHEF

The Four Seasons Resort Hualalai is seeking a Senior Pastry Chef who possesses a passion for culinary excellence and brings enthusiasm to every task. Our Senior Pastry Chefs have the opportunity to enhance our guest experience by demonstrating exceptional knowledge of the Resort and embodying the Golden Rule in every interaction. Responsibilities include preparing a variety of pastry items for breakfast, lunch, and dinner in accordance with production requirements and quality standards while ensuring a safe and sanitary work environment.

KEY RESPONSIBILITIES
  • Prepare pastry items based on guest orders, ensuring consistent quality by following recipe guidelines, production, portion, and presentation standards; complete mise en place and set up the station for service.
  • Initiate food items that are prepared in advance, ensuring not to exceed estimated needs.
  • Operate, maintain, and properly clean kitchen equipment, including fryers, broilers, stoves, steamers, food processors, mixers, slicers, ovens, steam tables, tilt kettles, waffle irons, and flat top grills.
  • Label and date all food containers, rotating items according to policies, ensuring perishables are stored at appropriate temperatures; check inventory for shift use, determine necessary preparation, and manage line setup; note any out-of-stock items or potential shortages; return unused food items to designated storage areas, ensuring all perishables are covered and dated; assist in developing plans to address any food cost issues; manage food waste and usage according to policies.

QUALIFICATIONS

Education/Experience
  • High school diploma, culinary school, or equivalent experience. Advanced culinary knowledge is expected for this role.
  • A minimum of two years of culinary or related experience. Practical knowledge is typically acquired on the job.
Weekend availability is required.

State Requirements
  • Must obtain a Tuberculosis (TB) clearance card as mandated by the Hawaii State Department of Health when working in food and beverage.
  • Successful candidates must possess legal work authorization in the United States.
