Position Overview: As a Chef de Partie at The Alden, you will be responsible for managing a designated station within the kitchen. Your primary responsibilities will include:
- Overseeing and executing operations in a specific kitchen section (such as Garde Manger, Saucier, or Pâtissier) while working collaboratively with fellow chefs.
- Crafting a variety of visually appealing and flavorful dishes that showcase creativity and culinary skill.
- Ensuring consistent and attractive presentation of all dishes served.
- Managing the procurement of ingredients, supplies, and kitchen equipment.
- Maintaining compliance with health and safety standards within your kitchen area.
- Collaborating with Chef Jared to develop innovative seasonal recipes and menus that reflect current culinary trends.
Key Responsibilities:
Uphold sanitation standards in accordance with Health Department regulations, ensuring a clean and organized kitchen environment. Provide training to staff on sanitation practices as needed.
Implement safe food handling procedures to foster a secure work atmosphere by adhering to proper food safety protocols.
Maintain excellence in ingredient quality, food preparation, and presentation standards.
Lead the kitchen team in efficient production processes, quality assurance, recipe adherence, and minimizing waste.
Exhibit culinary expertise by engaging in daily cooking tasks, preparing essential menu items, and inspiring the team to maintain high standards of work ethic and quality.
Control labor and operational expenses through effective planning, purchasing, and inventory oversight, with a focus on cost management.
-Conduct daily checks on food items and provide constructive feedback to the kitchen staff.
Oversee the recruitment, training, mentoring, and assessment of kitchen personnel to guarantee outstanding food quality and presentation.
Engage with diners to enhance their experience, fostering positive interactions and accommodating special requests as necessary.
Identify and communicate any maintenance needs within the kitchen.
Provide support to other kitchen staff as required.
Participate in staff and management meetings as needed.
Perform additional tasks as assigned by the Head Chef.
Promote a safe and professional working environment.
-Hourly employees are eligible for overtime pay for hours worked beyond 40 in a week at a rate of 1.5 times their hourly wage.
-Salaried employees are expected to work a minimum of 50 hours per week.
