Job Title: Pastry Cook

Job Summary:

We are seeking a skilled Pastry Cook to join our team at Laredo Country Club. As a Pastry Cook, you will be responsible for preparing all baked goods, including bread, pastries, and desserts, according to our club's standard recipes.

Key Responsibilities:

  • Assess daily bakery needs with the Pastry Chef and/or Executive Chef.
  • Schedule production of bread, rolls, biscuits, and muffins to maintain a proper inventory of freshly baked goods.
  • Prepare all baked goods, puddings, gelatins, frozen desserts, stewed and baked fruits, pies, cakes, French pastries, and other bakery items.
  • Prepare and serve items in accordance with established recipe and presentation standards.
  • Operate within budgeted food cost guidelines under the supervision of the Pastry Chef or Executive Chef.
  • Review bakery needs for special events in conjunction with the Pastry Chef and/or Executive Chef as they occur.
  • Inform management of any problems concerning food quality production.
  • Assist the Pastry Chef with daily quality control checks.
  • Assist the Pastry Chef with equipment evaluations.
  • Report all maintenance and/or repair needs to the Pastry Chef or Executive Chef.
  • Supervise special bake shop orders, including decorated cakes.
  • Hire, supervise, train, and evaluate baker's helpers.
  • Oversee pastry cart and buffet dessert table set-up and presentation.
  • Keep the walk-in organized.
  • Set-up, maintain, clean, and break down the pastry station.
  • Notify the Pastry Chef in advance of expected product shortages.
  • Keep par stocks at proper levels and requisition supplies as needed to prepare menu items.
  • Properly store all food, which must be covered, dated, and rotated daily to ensure proper portion control and quality.
  • Attend kitchen employee and staff meetings.
  • Assist the Pastry Chef in completing other duties as assigned.

Licenses and Special Requirements:

  • Food Safety Certification.

Physical Demands and Work Environment:

  • Required to stand for long periods and walk, climb stairs, balance, stoop, kneel, crouch, bend, stretch, and twist or reach.
  • Push, pull, or lift up to 50 pounds.
  • Continuous repetitive motions.
  • Work in a hot, humid, and noisy environment.
