Steakhouse Manager Job Description

As a Steakhouse Manager at Desert Diamond Casinos, you will be responsible for creating menus and training team members to execute them. You will provide guidance and direction to sous chefs, including setting goals, performance standards, and monitoring performance. You will also provide and support on-brand service behaviors that are prepared to wow for customer satisfaction and retention.

You will be responsible for providing information to executive teams, managers, and supervisors, team members, and subordinates by telephone, in written form, email, or in person. You will utilize interpersonal and communication skills to lead, influence, and encourage others; advocate sound financial/business decision making; demonstrate honesty/integrity; lead by example.

You will work to meet or exceed goals provided by the Executive Sous Chef, including performance goals, budget goals, team goals, etc. You will ensure menu items are flavorful, well presented, and cost-effective. You will encourage and build mutual trust, respect, and cooperation among team members.

You will manage day-to-day operations of the steakhouse, ensuring that quality standards and expectations of the customers are met or exceeded on a daily basis. You will review staffing levels to ensure that guest service, operational needs, and financial objectives are met. You will understand team members' positions well enough to perform duties in team members' absence or determine appropriate replacement to fill gaps.

You will work with the Human Resources Department to fill open positions. You will identify the developmental needs of others and coach, mentor, or otherwise help others to improve their knowledge or skills. You will manage team member progressive discipline procedures for areas of responsibility. You will ensure team members are treated fairly and equitably. You will ensure disciplinary procedures and documentation are completed in a timely manner. You will ensure enterprise and department policies are administered fairly and consistently. You will ensure compliance with all food handling and sanitation standards.

You will administer the performance appraisal process for direct report managers. You will follow proper handling and temperature standards of all food products. You will ensure employees maintain required food handling and sanitation certifications. You will prepare and cook foods of all types, either on a regular basis or for special guests or internal functions. You will recognize superior quality products, presentations, and flavor. You will improve service by communicating and assisting individuals to understand guest needs, providing guidance, feedback, and individual coaching when needed.

You will review comment cards, guest satisfaction results, and other data to identify areas of improvement. You will train kitchen team members on the fundamentals of good cooking and excellent plate presentations. You will demonstrate new cooking techniques and equipment to staff. You will observe service behaviors of team members and provide feedback to individuals and/or managers. You will use enterprise computer systems in daily operations to meet goals and maintain standards. You will work with the Executive Sous Chef and keep them informed of issues as they arise. You will analyze information and evaluate results to choose the best solution and solve problems. You will manage department controllable expenses, including food cost, supplies, uniforms, and equipment. You will participate in the budgeting process for areas of responsibility. You will perform other duties as required. You will analyze member survey results and regular member/guest feedback. You will partner with management to identify opportunities for improvement to be addressed with effective training solutions. You will exemplify the desired culture and philosophies of the organization. You will demonstrate Desert Diamond Casino's On-Brand attitude towards team members and guests at all times. You will display, support, and reinforce Desert Diamond Casino's Spirit of Service Standards. You will model the company standards and lead by example.
