Position Summary:

The Nutritional Care Specialist is responsible for assessing and planning the nutritional care of residents in accordance with applicable federal, state, and local standards, guidelines, regulations, policies, and procedures, while collaborating with the Food Service Director/Manager to ensure that quality food service and nutritional care are provided to residents.


Education:

Bachelor's degree in Dietetics, Nutrition, or a related field.


Licenses/Certification:

Registered Dietitian with the Commission on Dietetic Registration of the American Dietetic Association. License or certification as mandated by the state of employment. ServSafe Food Safety Certification preferred.


Experience:

Experience in a long-term care environment and geriatric nutrition is preferred.


Key Responsibilities:

- Maintain clinical nutrition documentation for residents in accordance with Nursing Center policy and procedure, as well as state and federal regulations.

- Ensure that all assessments and progress notes documented in the medical records are accurate, informative, and descriptive of the services provided and the resident's response to the care plan.

- Complete all documentation within required timeframes and in accordance with Nursing Center policy and procedure, as well as state and federal regulations.

- Collaborate with the interdisciplinary team in developing, implementing, and evaluating care plans; attend meetings/conferences to discuss the clinical care of residents; and communicate resident concerns and responses to interventions to interdisciplinary team members and direct care staff.

- Involve residents/families in planning objectives and goals for the residents.

- Coordinate with the Food Service Director/Manager to review and customize regular and therapeutic menus to meet residents' food preferences in accordance with established policies, procedures, Diet Manual guidelines, standards of practice, and regulations, ensuring that all diets ordered by physicians are included in the therapeutic menu.

- Provide feedback and suggestions to enhance the menu.

- Monitor food temperatures and quality at the point of service.

- Oversee the distribution of nourishments, supplements, and meals to residents, taking corrective action when necessary.

- Assist the Food Service Director/Manager with processing diet orders and changes, ensuring that an accurate tray card is available for each resident receiving meals.

- Ensure that new residents are visited upon admission to obtain a Diet History and food preferences using the company-approved form.

- Routinely inspect food service areas and practices.

- Participate in the long-term care survey process.

- Assist the Food Service Director/Manager with purchasing decisions for food, supplies, equipment, etc., and with training Nutrition Services employees.

- Perform other duties as assigned.

- Ability to communicate effectively with residents and their family members, and at all levels of the organization.

- Ability to be accurate, concise, and detail-oriented.

- Knowledge of safe food preparation and handling techniques.

- Knowledge in quantity food production.
