This position offers an experience-based salary starting at $60k, with bonus opportunities amounting to 10% of the base salary.

Responsibilities:

  • Executing the Executive Chef's requests and orders without questioning.
  • Ability to execute all positions on the line and assist line staff when needed.
  • Oversee the production of all menu items and ensure they meet the company's quality standards.
  • Familiarity with work safety and emergency procedures.
  • Expedite orders correctly and efficiently to maintain smooth kitchen flow.
  • Understand the importance of standard recipe cards and plating guides.
  • Perform line checks, including temperature checks of refrigeration, rotation and dating of foods, and proper prep and freshness.
  • Assist in creating and executing daily specials.
  • Implement closing duties for the runners, stewards, line/pantry cooks, and ensure all tasks are completed.
  • Maintain high-quality food standards, seasonal specials, and train staff according to THE ONE GROUP brand guidelines.
  • Strong math and English skills for calculating, communicating, writing requisitions, and completing food inventories.
  • Work closely with staff to ensure their jobs are executed according to company guidelines.
  • Maintain A+ standards for kitchen cleanliness and adhere to Health Department Guidelines.
  • Attend weekly management meetings and corporate meetings, holding monthly mandatory kitchen meetings to address issues.
  • Coordinate with the purchaser for ordering daily and assist chefs with scheduling.
  • Monitor kitchen crew to prevent breakage and inspire motivation.

Fiscal Responsibility:

  • Monitoring daily labor and food cost reporting sheets to ensure costs stay within budgeted parameters.
  • Reviewing monthly profit and loss statements and acting on variances.
  • Ensuring authorized overtime.
