Job Overview

Position Summary: Responsible for the setup and operation of all machinery while ensuring it is prepared for cleaning and sanitation.

Key Responsibilities:

  1. Utilize compressed air to remove all residual cheese from machinery.
  2. Package non-consumable cheeses in designated containers.
  3. Prepare electrical components for sanitation by bagging appropriately.
  4. Thoroughly clean and sanitize all machinery to comply with industry regulations.
  5. Disassemble and reassemble all equipment for sanitation purposes, including packaging machinery.
  6. Operate and set up all packaging machinery and related equipment, ensuring quality and efficiency while minimizing downtime.
  7. Initiate and transition the Koch line, checking for any leaks in packaging.
  8. Regularly inspect products for correct texture, appearance, and contamination.
  9. Monitor the dimensions and shape of cuts to ensure they meet specified standards (e.g., medium dice, large dice, etc.).
  10. Oversee the application of anti-caking agents in accordance with departmental procedures.
  11. Ensure the proper handling of cellulose powder to protect it from contaminants.
  12. Maintain appropriate weight ranges during packaging, adhering to maximum allowable variance.
  13. Conduct quality checks on packaging for printing errors, color accuracy, and clarity.
  14. Monitor oxygen levels in finished product packages hourly and after any mechanical adjustments.
  15. Accurately document activities in various logs, including metal detector logs and operational reports.
