Job Summary:

The Meatcraft Specialist will assist the culinary team in the processing and production of various menu items in the butchery department. This includes rendering whole animal carcasses, producing specialty meat goods, and assignments related to menu and recipe design.

Duties and Responsibilities:

• Processing animal carcasses for use in the kitchen and as standalone menu items.
• Assisting in the development, standardization, and implementation of recipes and menus.
• Understanding dietary restrictions and how they affect menu items.
• Checking ingredient quality and receiving deliveries.
• Collaborating closely with the culinary team to ensure seamless execution of service and culinary R&D programs.
• Attending Cook's meetings.
• Maintaining equipment, tools, and the physical workspace.
• Complying with all health department standards and practices and maintaining a clean and orderly work environment at all times.
• Performing all other job-related duties, including safely lifting up to 50 pounds and standing for long periods.

Requirements and Qualifications:

• Minimum 2 years of experience in a butchery position or equivalent knowledge and experience.
• Curiosity about regenerative farming, culinary arts, and food culture.
• Impeccable organizational skills and attention to detail.
• Excellent teamwork and communication skills.
• Ability to thrive in a fast-paced work setting and multitask efficiently.
• Knowledge of applicable fire, health, and safety codes (Food Handlers Certificate or ServSafe Certification a plus).

Benefits and Compensation:

• $18-$22 per hour compensation package.

• Full-time position in-person at Blue Hill at Stone Barns in Pocantico Hills, NY, with shifts potentially involving evenings and weekends.
