Job Summary

We are seeking a highly skilled and experienced Culinary Operations Director to join our team at the Texas Department of Aging & Disability Services. As a key member of our food service team, you will be responsible for overseeing the preparation, cooking, and serving of meals for individuals with intellectual and developmental disabilities who reside at our state-supported living centers.

Key Responsibilities
  • Oversee the preparation, cooking, and serving of meals for individuals with specialized diets and textures.
  • Lead a team of cooks and kitchen staff to ensure efficient and safe food production.
  • Develop and implement standardized recipes and menus to meet the dietary needs of our residents.
  • Monitor and maintain accurate records of food consumption and inventory.
  • Ensure compliance with federal and state food safety guidelines and regulations.
  • Train and supervise kitchen staff on proper food handling, preparation, and sanitation techniques.
  • Collaborate with our dietary team to develop and implement menus that meet the nutritional needs of our residents.
  • Ensure that all food service equipment is properly maintained and sanitized.
  • Develop and implement procedures for handling and storing food, including perishables and frozen foods.
  • Participate in the development and implementation of policies and procedures related to food service operations.
Requirements
  • High school diploma or equivalent required; degree in culinary arts or related field preferred.
  • Minimum 5 years of experience in food service management, with at least 2 years in a supervisory role.
  • Knowledge of food preparation methods, food storage standards, and sanitation regulations.
  • Ability to analyze problems and recommend solutions.
  • Ability to work well under pressure and within a strict time limit.
  • Ability to lift minimum of 25 pounds and stand/walk on hard floors for extended periods.
  • Ability to work harmoniously and productively with co-workers and residents.
Working Conditions

This position requires the ability to work in a fast-paced environment and to lift, bend, and reach for extended periods. The successful candidate will be required to work a designated shift, but may be required to work variable schedules, extended shifts, and/or overtime as needed.
