Position: Butcher Specialist

Compensation: Starting at $18.00

Schedule: Monday-Friday, 7:00 AM until finish

Position Overview:

Responsible for the cleaning, cutting, portioning, and merchandising of all boneless meat products.

Key Responsibilities:
  • Clean, trim, slice, and portion subprimals of beef, pork, lamb, and veal for future processing.
  • Inspect meat products for defects, bruises, or blemishes.
  • Accurately interpret and follow customer-specific instructions.
  • Conduct Quality Control checks and communicate with supervisors regarding any defects.
  • Separate meats and byproducts into designated containers and seal them properly.
  • Utilize knives, cleavers, and other equipment for meat cutting and trimming.
  • Weigh meats and label containers with weight and contents.
  • Adhere to the company's detailed product specifications.
  • Perform additional duties as assigned.

Knowledge, Skills, and Abilities:
  • Working knowledge of production equipment.
  • Ability to accurately portion all boneless cuts of meat in a timely manner.
  • Capability to reduce processing costs by cutting and sizing portions accurately while meeting customer specifications.
  • Problem-solving skills related to trimming and product substitutions.
  • Able to thrive in a fast-paced, high-pressure environment.
  • Team player with a positive attitude.
  • Effective communication skills, both written and verbal, in English.
  • Understanding of the Meat Buyer's Guide specifications as they relate to the company's internal product specifications.
