Job Description

Purpose of the Lead Cook:

The Lead Cook plays a crucial role in ensuring the high-quality meal service at Appledorn Assisted Living Center South. Working closely with the Chef and other kitchen staff, the Lead Cook is responsible for preparing or directing meal preparation, maintaining a clean kitchen, and adhering to safe food handling practices.

Key Responsibilities:

  • Meal Service: Prepare all foods and beverages for meals, adhering to menu guidelines, policies, and regulations.
  • Preparation of Substitute Items: Offer alternative menu items when residents decline their initial selection, as directed by the Chef.
  • Documentation: Properly complete required documentation of temperatures, foods used, and other relevant information.
  • Food Presentation: Ensure food is served properly, at the correct temperatures, and in an appetizing manner.
  • Food Monitoring: Monitor food and plates returned to the kitchen, informing the Chef if a particular food is not eaten by multiple residents, and the Shift Supervisor if an individual resident is returning food uneaten.
  • Resident Satisfaction: Pay attention to resident likes and dislikes, offering alternate selections that meet their preferences.
  • Compliance with Diet Orders: Ensure adherence to diet orders, monitor weights and nutritional status of residents (in cooperation with the Resident Services Coordinator).
  • Supervision: Supervise and assist staff in the production of all menu items, utilizing high-quality, fresh, local ingredients whenever possible.
  • Shift Supervision: Supervise Utility Workers and Server/Prep assistants.
  • Equipment Maintenance: Immediately report any malfunction in equipment or physical plant.
  • Regulatory Compliance: Maintain awareness of changes in resident food consumption and communicate with the Resident Services Coordinator regarding any challenges to residents' achieving and maintaining adequate nutrition.
