No outside firms or solicitation to fill this position will be accepted.We are seeking an experienced commercial baker, food technologist, and/or R&D innovation professional with specific expertise in laminated and frozen doughs in a large scale manufacturing setting. Job SummaryAs a Director of R&D, you will work closely with R&D leadership to support work related to product development and bench sampling at our state-of-the-art innovation lab in Smyrna, GA. You will lead in product, recipe, and formula development for Laminated Dough as well as conducting ingredient research and optimizing production processes to achieve the desired quality and taste of our products. You will collaborate with oursales team and customers in creating innovative products and/or matching control targets. You will work alongside our operations team to ensure all products are feasible within our manufacturing footprint and are consistent with specifications. Additionally, you will perform critical business support tasks and maintain the cleanliness and FSQA standards of our plant and facilities. Responsibilities:Product DevelopmentLead new product development for assigned bakery items, related tasks, and bench-top or line-produced sample requests.Ensure all products are baked to the targeted specification (either internal or customer provided).Collect, package, and label finished goods.Maintain good GMP's and food safety in the finished goods storage area.Assist in ensuring customer needs regarding flavor, nutrition, label claims, etc. are metMaintain inventory and par levels of core ingredients and currently used raw materialsEnsure all new raw materials are ordered and in-house for bench trials.Work with suppliers to establish strong relationships and ensure the consistent quality of raw materials.Lead in transferring formulas from bench top to production line trialLead in coordinating and management of plant trialsMaintain good GMP's and food safety in raw material storage area.Supervises additional pilot personnel as needed.
Capture and maintain the collection of data from daily trials and finished productMaintain detailed records to create a knowledge base for future product development and troubleshooting.Ensure key steps and results including mixing procedure, lamination steps, proofing, and baking profiles are documented. Ensure moisture, pH, shelf life, and dimensions are taken and recorded.Maintain chronological formula logbook.Review and proof nutritional labels, claims, and self-life records as necessary.Assist R+D leadership with assigned bakery tasks, product development, and bench-top sample requests.Business Support Manage outbound shipment of customer samplesCollects acceptable sample products for customer evaluation.Packages sample request as required (ice packs, dry ice)Create outbound labels and coordinate shipment with vendorsProvide technical support in manufacturing facilities, including writing SOPs for production staff.Stay up to date with food safety regulations, industry standards, and labeling requirements. Support Finance in the development of product costingResearch monitor consumer trends and current wants/needs within the food industry for innovative ideas.Facilities Maintenance Ensure cleanliness of R&D Test Kitchen and bench areas. Regular cleaning, upkeep, and maintenance of scales, mixes, and machines as required.Qualifications and Skills:QUALIFICATIONS AND SKILLS:BS in Food Science, Nutrition, Chemistry, or Chemical Engineering strongly preferred, culinary degree with professional baking experience will be considered in lieu of degree.Strong expertise in frozen dough and laminated dough products required6-8+ years of relevant work experience preferredStrong time management and superior organizational skills, with the ability to prioritize multiple projects in a dynamic, deadline-driven environmentPassion for baking Excellent verbal and written communication skills and ability to interact effectively at all levels of the organization.Proficient in MathematicsDetail-oriented to accurately review and document key procedures, label review, nutritional calculations, etc. Intermediate knowledge of Microsoft Excel, Word, and PowerPoint Must be able to speak and communicate in English.Work Environment: This job operates primarily in a Research & Development baking lab located in a production plant. The employee is occasionally exposed to facility elements such as extreme temperatures, noise, dust, fumes, and odors.
