will drive the development of bakery, confectionery, dessert, and cake products from initial concept to market launch. This role involves managing all technical aspects including product design, quality control, shelf life, packaging, and claims validation. The specialist will blend creativity with technical expertise to ensure that new products meet high standards of quality and market readiness.Responsibilities and DutiesOversee and manage the entire product development lifecycle for bakery items, confections, desserts, and cakes, ensuring all technical elements such as product design, quality control, shelf life optimization, packaging solutions, and claims validation are meticulously addressed.Spearhead the creation and refinement of innovative bakery and confectionery products, applying a passion for food design and creative development while ensuring smooth integration with commercialization efforts for a successful market launch.Conduct and lead plant trials, sensory testing, and shelf-life evaluations specific to bakery and confectionery products, ensuring that each product meets rigorous quality standards and consumer expectations.Implement and manage sensory and lab testing programs for raw materials and finished products, contributing to detailed product evaluations and continuous improvement.Act as a key innovator and project coordinator, demonstrating initiative and strategic thinking in executing complex projects related to bakery, confectionery, dessert, and cake development.Provide technical guidance during production scale-up, ensuring product specifications are met and addressing any challenges that arise during mass production.Collaborate with cross-functional teams, including quality assurance, marketing, and sales, to validate product claims and ensure alignment with regulatory standards and market trends.Stay informed about industry trends, technological advancements, and consumer preferences in the bakery and confectionery sectors to continuously enhance product offerings and innovation.Qualifications:Lead product formula optimization and production scaling efforts to ensure efficiency and consistency in large-scale manufacturing.Oversee costing and budgeting for new ingredients and recipes, providing strategic insights for cost management and product development.Direct the creation and maintenance of finished goods labels, ensuring compliance with industry standards and the Gold Standard.Collaborate with Marketing & Sales teams to drive successful commercialization and market introduction of new products.Conduct advanced lab analyses (e.g., pH, water activity, viscosity) to uphold high-quality standards and address technical challenges.Develop and manage a comprehensive library of recipes and specifications, ensuring accuracy and accessibility for product development.Lead and support additional tasks and initiatives as required to enhance overall product quality and development processes.Preferred Background/Skills/ExperienceNutracoster, Genesis, or other food formulation and labeling software.Food Manufacturing or Food Service Experience in Bakery Setting.Strong mathematic ability.Experience or Knowledge of BRC and other 3rd party audit schemes.Required Background/Skills/ExperienceAbility to manage, track and execute against multiple projects and tasks.Proficiency in Microsoft Word, Excel, Outlook, and PowerPoint.Strong organizational and administrative skills.Ability to influence/support other team members to achieve departmental and organizational goals.Minimum of an Associate Degree, Baking Certification, or 3+ Years of Applicable Experience Required (Bachelor s degree a plus).
