Vat Operator

Vat Operator Shift: 11:00 PM - 7:30 AM Rotating Days Off (Subject To Change) General Purpose: Pasteurize milk, add ingredients and cook vats according to recipe specifications. Run separator and homogenizer to obtain targeted recipe specifications.  Job Duties and Responsibilities:Add ingredients as needed for each recipeAdjust Casein as required as for each recipeAdjust the fat level as required for each recipeSharpen HCV knives as neededMonitor the casein-to-fat ratio to maximize the potential cheese yield by determining the proper amount of fat to add to the available protein/casein in the milkComplete make-sheet accuratelyCIP HTST #1 after each production runCIP the Vats, Separator, Starter Tanks, Product LinesCurd and Whey lines as required per SOPAccurately issue ingredients on SAPMust be able to make line connections as needed for CIP and product runChange-over silos and tanks as requiredParticipate in the 5S programMaintain work area according to 5S standardsMaintain safe working conditions for employees and compliance with all state and federal regulations regarding health and safety issuesDedicate effort to safety as we expect every employee to leave work in the same condition as they arriveFollow all DFA good manufacturing practices (GMP) and work in a manner consistent with all corporate regulatory, food safety, quality, and sanitation requirementsExhibit the values and ethics of Dairy Farmers of America through honesty, discretion, and sound judgmentAdhere to all DFA Quality, Safety and GMP policies and procedures and report any nonconformityAttend required training, including but not limited to, Safety, GMP, Hazard Analysis and Critical Control Point (HACCP), and Safe Quality Foods (SQF)Responsible for monitoring and taking corrective actions when necessary for a critical control point as part of the plant HACCP planEnsure that all documentation is done correctly and turned in promptlyThe requirements herein are intended to describe the general nature and level of work performed by employee, but is not a complete list of responsibilities, duties, and skills required.
