Job Summary/Basic Function The primary responsibility of this position is to direct all dietetics and nutrition functions for Dining Services. One-to-one dietetic counseling for students. Nutrition and wellness education. Oversee and ensure accuracy of nutrition information in menu/inventory management system. Coordination of new recipe and product selection. Supervision of Nutrition Technicians. Preceptor for Dietetic Intern experiences in Dining Services. Assist with new menu concepts, product selection, recipe development, and menu writing. Liaison with Center for Holistic Health, Center for Student Success, and other affiliated campus departments. Serves on the management team for Dining Services. Direct all nutrition and dietetics functions for Dining Services including counseling for students with dietary considerations; nutrition education and promote healthy eating and lifestyle choices for students and groups on campus and in Dining Services. Follow professional standards and guidelines to document all verbal and written counseling for students with dietary considerations. Develop and implement ideas to expand nutrition labeling and education in Dining Service operations. Oversee nutrition information in menu/inventory management system to ensure accuracy. Supervise and mentor Nutrition Technicians (graduate students). Precept/work with dietetic interns in their foodservice management rotations. Research, source, monitor, and order products and equipment for dietary considerations at AllerFree station and in all departments. Assist with new product selection, recipe development, and menu concepts to ensure balanced menus. Collaborate with other campus departments as needed.
