responsibilities:
Responsible for ensuring compliance with all federal and state regulatory requirements, as well as the SQF program, including completing HACCP and production process records accurately and in a timely manner. Review, confirm, and validate raw ingredient specifications, maintain approved specifications on file, and conduct yearly document reviews. Assist in completing new product PSI packages and auditing product specifications annually, recommending revisions as necessary. Verify the accuracy and completeness of first print labels for new products, and conduct yearly audits on nutritional panels and allergen statements to ensure they align with ingredient specifications. Review and validate incoming products, lot codes, use-by dates, and quantities, ensuring each item is correctly tagged and meets specifications, with process procedure paperwork completed accurately. Adhere to QA, GMP, HACCP, OSHA, and SQF regulations, policies, and procedures, while verifying and validating metal detector calibration, scale and thermometer calibration, and compliance checks. Randomly weigh and test batter, baked, and finished products to ensure compliance with weight and temperature standards, confirming that production and packaging teams perform these checks correctly. Validate declared label weights and test temperatures of various products, storage areas, and water temperatures in the dish room. Ensure only approved cleaning chemicals are ordered and that updated MSDS sheets are on file. Visually inspect products after baking, during cooling, and as finished products to ensure they meet standards. Verify and validate that product changeover procedures, SOPs, and SSOPs are accurately followed. Perform or monitor sanitation validations and programs for air, listeria, salmonella, and allergens, inputting data into the computer and ordering swabbing supplies as needed. Conduct Employee Hygiene Check Audits twice weekly, as well as monthly Internal/External Premise and Glass & Hard Plastic Audits, documenting recommended corrective actions. Perform weekly facility inspections and document corrective actions accordingly.
