Job Overview:

Head Bartender is to supervise Bar Team's performance during any given shift. Must take orders, prepare, and serve alcoholic and non-alcoholic beverages to guests courteously and efficiently according to restaurant specifications. Maintain stock, supplies and cleanliness of bar and equipment. And have complete knowledge of the program.

Duties And Responsibilities

•Maintain complete knowledge of and comply with all departmental policies/service procedures/standards.
•Maintain complete knowledge of correct maintenance and use of equipment. Use equipment only as intended.
•Maintain positive guest relations at all times. Resolve guest complaints, ensuring guest satisfaction.
•Oversee the opening and closing of the bar. Give guidance to the bar team whenever is needed.
•Communicate with guests and staff confidently and professionally.
•Monitor and maintain cleanliness, sanitation, and organization of assigned work areas. Which include Main Bar, Dispense Bar, Dispense Walk-in, Prep Room, Liquor Room.
•Lead and manage the bar team. Clearly allocating what their responsibilities and main duties are each shift.
•Maintain complete knowledge of and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons, and drunk driving.
•Maintain complete knowledge of the Point of Sale system and manual systems.
•Ensure all relevant checklists are completed and SOPs are adhered to. Work alongside the management team to update the same.
•Serve drinks to guests. Ensure drinks are made correctly and arrive at tables in timely manner.
•Anticipate and communicate replenishment needs promptly, ensuring no shortages throughout scheduled function time.
•Clearly communicate last call at designated closing time to guests and servers.
•Present guest check and process payment. Adhere to all cash handling and credit policies/procedures.
•Ensure maximum usage of all supplies to attain budgeted beverage cost and to prevent waste.
•Complete closing side duties. Complete Handover report on a nightly basis. Ensure Wastage is accurately recorded.
•Complete all closing reports in the Point of Sale system. Count bank at end of shift; complete designated cashier reports and drops receipts; secure bank.
•Ability to work a varied schedule that may include early morning, evening, night, and weekend shifts.
•Be immaculately presented, attentive and proactive with the ability to respond quickly to needs of the guest and restaurant management team.

•To assist the beverage team in the building of an efficient department, by taking an active interest in the employees' welfare, safety and development.
•To assist in the training of all employees, ensuring that they have the necessary skills to perform their duties with the maximum efficiency and in the most productive manner.
•Supervise bar team, ensuring that the correct standards, methods of service are maintained and proper hospitality standards are met.
•To conduct and contribute to regular departmental communications meetings.
•To monitor standards and supply of all restaurant equipment, ensuring the management team is aware of any needs.
•To ensure the bar manager closing duties are carried when manager is absent from floor.

•To control the bar during service, taking orders and issuing bills.
•Work alongside the Bar Team and management on beverage research and development.
•Carry out stock takes and stock reconciliation on a weekly basis.
•Assist the Bar Manager with daily tasks when he is absent.

People Development

•To identify training requirements, organize and follow through with "on the job" and theoretical training.
•Support induction/mentor process through personal representation including completion of skills and standards.
•Assist in staff training as required and liaise with senior management in the development of key team members.
•Guide, coach and support staff during service, to increase the standard of service and develop teamwork.
•Take appropriate corrective action, alongside with other managers, when necessary.
•Organize and deliver regular FOH beverage trainings and ensure attendance at any trainings organized by bar team.
•Be responsible for the induction process, ensuring that all new staff attend company induction and receive a comprehensive departmental induction and the necessary training to perform their duties to the required standard.
•To coach new bartenders, bar backs for the first week, following the training Schedule. Ensure all new team members receive a bar induction pack.
•To develop the team through leading by example as well as lead high morale and motivation.
•Report any guest or staff grievance to the line manager.

Health & Safety

•Ensure a safe workplace by identifying hazards and taking corrective action.
•Awareness of health and safety audit reports and the required action within the restaurant.
•Identify maintenance activity required in order to uphold the required standard.

Physical Abilities

•Ability to grasp, lift, move, or push goods on cart/truck weighing up to 25pounds.
•Ability to move safely in uneven terrain or in confined spaces.
•Ability to see and respond dangerous to situations.
•Requires mobility. Sense of smell, taste, touch, and sound. Eye/hand coordination and manual dexterity.
•Remain in stationary position for 8 or more hours throughout work shift.
•Ability to tolerate varying conditions of noise level, temperature, illumination, and air quality.
