Restaurant General Manager The Restaurant at JUSTIN Vineyards & Winery Location: Paso Robles, CA (relocation required) About the Role The Restaurant at JUSTIN Vineyards & Winery is an award?winning fine dining concept helmed by Executive Chef Rachel Haggstrom. The restaurant offers a hyper?seasonal, Michelin?starred five?star tasting menu on dinner nights four nights per week, a farm?to?table lunch menu, and expertly crafted wine pairings. As Restaurant General Manager, you will oversee all aspects of the dinner service, partner closely with the culinary and wine teams, and maintain Michelin and Forbes 5?star standards of excellence. Key Responsibilities Support the Executive Chef in all operational aspects of dinner service, including staffing, inventory, cost control, guest service, food quality, and sanitation. Ensure the team is well educated on menu items and seasonal changes. Perform all duties professionally and with integrity. Deliver consistent, exemplary service that meets and exceeds Michelin and Forbes 5?Star standards. Educate and develop staff in food, beverage, and high?level service. Lead by example on the floor with a sophisticated, guest?centric approach. Mentor the team through training, recruitment, and onboarding. Manage day?to?day operations and uphold quality standards, including reporting, safety checklists, and regulatory compliance. Maintain and update the wine list and beverage/mocktail menus. Collaborate with the culinary team on wine pairings. Own the business to increase sales and profitability. Establish a positive work culture and contribute to continuous improvement. Build cooperative relationships with vendors, partners, and farmstead staff. Address guest issues promptly and appropriately. Ensure equipment is clean and functional. Enforce restaurant policies, deliver corrective action, and maintain fairness. Work with the Executive Chef on strategic planning and overall success. Comply with all federal, state, county, and municipal health, safety, and labor regulations. Candidate Qualifications 45+ years of upscale or fine?dining restaurant management experience, with at least 23+ years in a Michelin, Forbes 5?Star, or comparable concept. Strong wine knowledge required; Level?1 or 2 Sommelier certification highly preferred. High?service pedigree required (Michelin, Forbes 5?Star, luxury hotel, or comparable experience). Deep knowledge of the fine dining scene and an eagerness to evolve with industry trends. Passion for hospitality, high?caliber food, beverage, and guest service. Excellent multi?tasking, communication, and leadership abilities. Hands?on, lead?by?example style of leadership. Strong interpersonal skills and the ability to manage guest demands. High organizational skills and acute attention to detail. Initiative to handle complex responsibilities with minimal direction. Experience in P&L management and cost control (preferred). Flexible schedule to support business needs. Food Safety Certification required. Ability to stand/walk for extended periods.
