**Description**

The Cook Lead is responsible for the production of dining room meals and nutritional services meals according to recipe standards. Preparation of pre-production items to be used in recipes. Cleans and maintains sanitary standards in and around work station. Follows complete HACCP Guidelines for Food Safety. It is required that this position be in full compliance with HIPAA.

**Responsibilities**

* The Cook Lead is responsible for the production of food items related to daily meals and nutritional services using standard recipes.

* Prepare for tray line and dining room buffet

* Confers with the Assistance Food Service Director or Executive Chef on the prep work needed for production of the upcoming meals

* The Cook Lead is in charge of the garnish for tray line and buffet foods.

* Cleans and maintains work station as detailed by supervisor

* The Cook Lead is responsible for the recording of data, such as waste logs, leftovers, portion audits, quality checks, etc.

* The Cook Lead will attend training sessions as assigned and complete other duties as assigned.

**Knowledge, Skills, and Abilities**

* Knowledge of basic cooking principles

* Ability to follow standardized recipe cards

* Self motivator with the ability to work unsupervised

* Ability to follow instructions as given by supervisor

* Ability to read, write, and speak English fluently

* Ability to form cooperative, effective, productive working relationships

* Ability to learn new tasks as the department grows and develops

**Education and Qualifications**

* High School Diploma or equivalent required

* Must have two years previous experience as a prep cook in upscale restaurants, private clubs, and/or hotels

* Dietary experience
