About The Moore

The Moore is a landmark destination in the Miami Design District, comprised of a private members club, hotel and a collection of restaurants, retail, exhibition, event and office space. Housed in the Districts circa-1922 Moore building, the reimagined, nearly 90,000-square-foot space integrates two, four-story structures located at the intersection of NE 40th Street and NE 2nd Avenue, and includes Elastika, the site-specific commission created by the late artist and architect Zaha Hadid for the inaugural Design Miami/ exhibition in 2005.

The Moores core programming extends throughout the buildings four floors: The first floor is anchored by a public, all-day dining concept. The second floor will house The Club at The Moore, a private members-only destination inclusive of a restaurant, multiple bars, lounges and private dining and event spaces. Located on the third floor, The Workplace at The Moore offers leasable private offices, dedicated desks and limited communal workplace access. The Hotel at The Moore is located on the buildings fourth floor and offers 15 hotel suites that are available for member and non-member bookings. Additionally, the fourth floor is home to The Gallery at The Moore, a 4,500-square foot private exhibition and event space that overlooks the buildings iconic Elastika atrium.

The redevelopment of The Moore is led by boutique hospitality firm and operator, WoodHouse. Founded by entrepreneur Brady Wood, WoodHouse creates, owns and operates experiential concepts, ranging from private clubs, restaurants and hotels to live music and entertainment venues.

Overview: A Sushi Cook at The Moore is responsible for preparing high-quality sushi dishes in accordance with established recipes and standards. This role requires precision, attention to detail, and a deep understanding of Japanese culinary techniques. A successful Sushi Cook should be knowledgeable about sushi ingredients, possess excellent knife skills, and be able to work efficiently in a fast-paced kitchen environment.

Responsibilities:

Sushi Preparation:

o Prepare sushi rice according to established recipes and standards.

o Cut, slice, and portion various types of fish and seafood for sushi dishes.

o Prepare sushi fillings, such as vegetables, tofu, and seafood, ensuring freshness and quality.

o Create aesthetically pleasing sushi rolls, nigiri, and sashimi.

Quality Control:

o Ensure that all sushi dishes meet the highest standards of quality, freshness, and presentation.

o Monitor and maintain freshness of ingredients, including fish, seafood, vegetables, and rice.

o Adhere to food safety and sanitation guidelines to prevent cross-contamination and ensure food safety.

Kitchen Organization:

o Maintain a clean and organized workstation, including proper storage of ingredients, tools, and equipment.

o Assist with inventory management, including ordering and stocking sushi ingredients as needed.

o Ensure that all kitchen equipment is properly maintained and in good working condition.

Teamwork and Collaboration:

o Work closely with other kitchen staff members to ensure smooth operation of the kitchen.

o Communicate effectively with servers and other front-of-house staff to fulfill customer orders accurately and efficiently.

o Collaborate with the sushi team to coordinate preparation and presentation of sushi dishes during busy service periods.

o Requirements

Culinary Skills:

o Proven experience as a sushi cook or similar role in a professional kitchen environment.

o Excellent knife skills and proficiency in sushi preparation techniques, including rice cooking, fish handling, and sushi rolling.

Food Safety Knowledge:

o Strong understanding of food safety and sanitation practices, including proper handling and storage of raw fish and seafood.

o Knowledge of HACCP principles and regulations is preferred.

Attention to Detail:

o Ability to pay close attention to detail and maintain high standards of quality and presentation.

o Strong organizational skills to manage multiple tasks and prioritize work effectively.

Team Player:

o Ability to work collaboratively as part of a team in a fast-paced kitchen environment.

o Effective communication skills to coordinate with other kitchen staff and front-of-house team members.

Flexibility:

o Willingness to work evenings, weekends, and holidays as required in a restaurant setting.

o Ability to adapt to changing priorities and handle pressure during busy service periods.

Education and Certification:

o High school diploma or equivalent is required.

o Formal culinary training or certification from a culinary school is preferred.

o Certification in food safety and sanitation is an advantage.
