GENERAL SUMMARY
A Banquet Server is responsible for the set-up, service and clearing of food and beverage items to banquet guests in a manner consistent with the Viejas service standards.
CORE SCOPE OF POSITION
* Sets banquet tables to meet function specifications.
* Prepares tables, action stations, buffets, service carts, dessert table/carts and cordial carts as specified in the Banquet Event Order.
* Assists in set-up of linen, china, glass, silver and accent pieces for each function according to the Banquet Event Order.
* Knows all banquet menu and beverages specified by group and is able to describe the ingredients and preparation methods.
* Communicates additional meal requirements, allergies, dietary needs and special requests to the kitchen.
* Communicates guest orders including any special needs or requests to the Banquet Manager or kitchen.
* Checks completed kitchen orders with the guest's original order; transports items to the guest table in a timely manner to ensure proper temperature is maintained.
* Offers pre-determined menu selections to each table; maintains knowledge of each selection's origin, taste and preparation method.
* Delivers and serves food and beverages, including, but not limited to, meals, condiments and accompaniments for assigned banquet events.
* Ensures each course is cleared in a timely manner and that tables are properly crumbed.
* Removes china, glassware, silverware and trash from tables at the conclusion of the meal period and delivers them to the stewarding area.
* Assists others with side work including, but not limited to cleaning, stocking and rolling of silverware.
* Assists fellow team members and other departments wherever necessary to maintain positive working relationships.
* Replenishes buffet items to ensure consistency and freshness in presentation.
* Monitors tableware to ensure it is presentable to guests.
* Monitors and maintains cleanliness, sanitation, and organization of assigned station and service areas.
* Maintains knowledge and promotes current promotions and event advertising one or more features of the property.
* Resolves problems beyond expectations without consulting a supervisor or escalates as needed.
* Follows Company and department policies, procedures and service standards.
* Follows all safety and sanitation guidelines when handling food and beverage items.
* Performs all other job duties as requested.

* Must be flexible to work different shifts.
Required Experience
EDUCATION/CERTIFICATION
* High school diploma or general education degree (GED).
* Food Handler's card required.
* RBS Certification of alcohol awareness program must be obtained within 90 days of employment and maintain current certification.
* Training in food, wine and liquor service preferred.
* Must be 21 years of age or older.
EXPERIENCE
* 1 year of related experience as a food and beverage staff working in a high volume restaurant, casino or banquet facility.
* Previous point of sale system experience an asset.
