This position collaborates with the Pastry Chef to efficiently execute the menu. The Lead Pastry Cook should be well-versed in pastry cooking methods, ingredients, equipment, and processes. Taking charge of ingredient preparation, station management, and dish creation according to restaurant recipes and standards is essential. Ultimately, you will play a vital role in ensuring customer satisfaction and the success of our restaurant.

Responsibilities:

  • Set up and stock the station for daily service.
  • Follow instructions from the Chef Team.
  • Maintain health and safety standards in food preparation and storage areas.
  • Collaborate with the kitchen team to cook menu items.
  • Monitor tickets, including allergy notes and special requests.
  • Keep the station clean, organized, and efficient.
  • Correctly rotate inventory following FIFO principles.
  • Ensure compliance with nutrition and sanitation standards.
  • Monitor baking ingredient inventory requirements.
  • Consistently plate dishes with finesse and cleanliness.
  • Complete all check-lists, DOH logs, and prep-lists diligently.
  • Prepare ingredients and handle baking equipment proficiently.
  • Create pastries, baked goods, and confections per designated recipes.
  • Artfully decorate pastries and desserts for appealing presentation.
  • Adhere to safety and health regulations.
  • Communicate effectively with the Pastry Chef or Chef on duty.

Skills and Qualifications:

  • High school diploma or equivalent.
  • Certificate in Culinary Arts, Baking and Pastry Arts, or relevant experience.
  • 3-4 years of experience as a pastry cook or in a similar role.
  • Strong communication and organizational skills.
  • Effective leadership skills and ability to delegate tasks within a team.
  • Solid understanding of baking techniques and the pastry-making process.
  • Capability to work cooperatively in a team or independently.
  • Thrives in a fast-paced, production-focused environment.
  • Fine Dining Experience is a bonus.
  • Attention to detail in all aspects of pastry preparation.
  • Clear and tactful communication with colleagues.
  • Excellent time management skills.
  • Proactive and positive demeanor.
  • Flexibility with working hours, including weekends and evenings.
