Description

As a Sushi Chef, a typical day might include the following:
  • Creating high quality sushi including cooking rice, rolling sushi, temperature recording, cutting and packaging for take-out and dine-in plate preparation
  • Working with the executive chef on menu development
  • Training, managing and overseeing the hourly sushi team members
  • Portions food products prior to cooking according to standard portion sizes and recipe specifications
  • Cook and prepare dishes, such as sauces, during rush periods and for private dining and other social functions
  • Follows proper plate presentation and garnish set up for all dishes
  • Organization and sanitize, kitchen, and storage areas
  • Execute methods of food preparation and cooking, sizes of portions, and garnishing of foods to ensure food is prepared in prescribed manner
  • Able to work in a high volume / fast pace work environment
  • Other duties as assigned
Requirements

This job might be for you if you demonstrate the following abilities and meet the following qualifications:
  • You have at least 2 years direct sushi chef experience in an upscale, high volume sushi restaurant
  • You are able to pass the Encore badging process
  • You present a neat and professional appearance
  • You are able to work in a high volume/fast paced work environment
  • You have understanding and knowledge to properly use and maintain all equipment in station
  • You have the ability to work at efficient and consistent pace
  • You are able to communicate effectively and accurately with co-workers
  • You are able to demonstrate teamwork with other staff members
  • You have flexibility with schedule which includes nights, weekends and holidays
  • You are able to work on your feet for extended periods of time
  • You are able to lift up to 30 lbs
Additional Experience Required:
  • ServSafe/Food Safety Certification
