BASIC PURPOSE: Prepare food items in accordance with production requirements and quality standards while maintaining a safe, sanitary work environment.

The culinary professional will help with breakfast prep and cooking duties, work from 5:00 AM to 11:00 AM or 6:00 AM to 12:00 PM. This is a full time position.

Breakfast Cook Duties and Responsibilities:

  • Take control of the breakfast service and ensure guests receive a truly delicious and memorable breakfast
  • Cooking and managing breakfast service and assisting with lunch service.
  • Setting up and cleaning down the kitchen after breakfast.
  • Ensure the kitchen is kept clean and hygienic at all times.
  • Ensure all stocks are kept under optimum conditions.
  • Ensure all dishes are being prepared to the correct recipe and to the correct quantity.
  • Ensure any anticipated issues are communicated promptly to the Manager.
  • Ensuring and controlling levels of guest satisfaction, quality, operating and food costs on an ongoing basis.
  • Monitor and ensuring that the production, preparation and presentation of food are of the highest quality at all times.
  • Personal grooming and appearance standards are met regarding cleanliness, sanitation and hygiene.
  • Assist with producing menus and new dishes.
  • Adhere to Health & Safety policies and regulations.
  • Able to handle fast paced environment and pressure calmly and professionally.
  • Hours of work are normally 5:00 AM to 11:00 AM or 6:00 AM to 12:00 PM.
  • Carry out any other duties as required by management.
  • General kitchen tasks
  • Assist with washing dishes as needed.
  • Prep food.
  • Keeping work area clean, organized and sanitized.
  • Set up, produce, and control quality of all food items
  • Maintain control charts of all food items produced, as well as opening and closing checklists and production of daily menu items.
  • Ensure the cleanliness and maintenance of all work areas, utensils and equipment.
  • Follow kitchen policies, procedures and service standards.
  • Follow all safety and sanitation policies when handling food and beverage.
  • Other duties include being able to read, follow menus and recipes, compute basic mathematical calculations.
Qualifications:
  • 2-4 years food handling and working experience in a professional kitchen.
  • Comfortable using a knife, is able to clean, chop vegetables, fruits with a good precision.
  • Has a basic understanding of frying, steaming, grilling, blanching /shocking & egg cookery.
  • Is able to work with guidance under moderate supervision.
  • Can identify commonly used proteins, fruits and vegetables.
  • Able to identify both quality and spoiled product by sight, smell and taste.
  • Diploma certification in a culinary discipline a plus but not required.
  • Must be able to work long hours including weekends and holidays.
  • Passion for culinary.
