**Job Description**

**JOB SUMMARY**

Under the general supervision of the Director of Dining Services, the Registered Dietitian is responsible for approving the regular and therapeutic diets so that food and nutritional needs of the residents of Glencroft Senior Living are met in accordance with the physicians orders and, to the extent medically possible, meet the dietary allowances of the Food and Nutrition Board of the National Academy of Sciences, National Research Council. This position confers individually and/or in groups with the Administrator Dietary Manager, Director of Nurses and possibly other administrative heads.

**ESSENTIAL FUNCTIONS**

Assist in development of the Providence Place Dietary policies and procedures manual.

- Develop managerial and planning skills of supervisory staff, e.g., purchasing procedures, specifications, inventories and records, menu planning for basic and modified diets with understanding of residents dietary needs.

- Assist in planning practical basic and modified menus and nourishment lists which are in keeping with limitations set up by staff (number of skills), equipment, budget, layout, and resident preferences and needs. Menu acceptance studies may be needed.

- Coordinate menu planning, purchasing, and food preparation by assisting in the developing of appropriate procedures, specifications, recipes, and recipe file.

- Through observation and evaluation, promote food production and service procedures that conserve nutritive value flavor, appearance and quality, and are attractively served at the proper temperature and in a form to meet individual needs.

- Review and assess all initial and annual Nutritional Risk Reviews and care plans initiated by Diet Technician. Review and assess all nutritional high risk charting or do charting per direction of VP of Health Services and state regulations. Assessments will be based on clinical data provided to the RD by the Providence Place.

- Develop and conduct in-service training for dietary personnel and, as needed, for other Glencroft personnel.

- Provide materials and other audio-visual aides, and information as available.

- Instruct employees in the use of equipment, food service, sanitation, safety, housekeeping, personal hygiene, etc.

- Develop skills in food preparation and service.

- Develop abilities to work together

- Promote participation in community training programs.

- Establish procedures for routine reports to the VP Health Services on the activities and developments in the Dietary Department.

- Continuously evaluate activities to determine progress, reassess goals, and establish new priorities. Show results of evaluation with the Director of Dining Services. If desired goals are not attained, try to determine with them what factors are impeding progress.

- Maintains good working relationships with all residents, dining services staff, and the management team at Glencroft.

- Must be able to cook large quantities and short order grill work and share methods with others.
