Description

As a Sushi Cook, a typical day might include the following:
  • Creating high quality sushi including cooking rice, rolling sushi, temperature recording, cutting and packaging for take-out and dine-in plate preparation
  • Preparing sushi dishes according to established guidelines on quality, portion size, presentation, and food safety
  • Expertly cutting, slicing, and filleting different types of fish
  • Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the Sushi Chef when quality is sub-standard
  • Setting up, maintaining, and cleaning stations in practicing good safety, sanitation and organizational skills while adhering to restaurant guidelines
  • Ensuring quality and safety of food by performing standard and any additional sanitary measures including good personal hygiene, cleaning of surfaces and sweeping of floors, as well as proper covering and storage of food items according to standards and procedures
  • Observing safety and security procedures, determining appropriate action beyond guidelines and report potentially unsafe conditions
  • Restocking all items as needed throughout the shift
  • Other duties as assigned
Requirements

This job might be for you if you demonstrate the following abilities and meet the following qualifications:
  • At least 1 year direct sushi experience in a fast-paced, upscale bar/restaurant
  • Experience with additional types of Asian a plus
  • Food Safety Certification a plus
  • A neat and professional appearance
  • Ability to work in a high volume/fast-paced work environment
  • Proper knowledge of use and maintenance of all equipment in station
  • Ability to work at efficient and consistent pace
  • Ability to follow directions
  • Ability to communicate effectively and accurately with co-workers
  • Ability to demonstrate teamwork with other staff members
  • Ability to work on your feet for extended periods of time
