Tasks and Duties:

Assist in ordering and inventories all linen requirements, including counting inventory upon delivery, returning bad stock for credit, and working closely with the linen company to prevent over-charges.

Review and understand all banquet event orders to coordinate scheduled events.

Communicate with Banquet Servers, housemen, and set-up Coordinators regarding banquet event orders.

Responsible for hiring, training, supervising, and terminating banquet staff.

Assist in the management and operation of restaurant and concession outlets.

Complete and post weekly staff schedules ensuring adequate staffing for each function.

Requisition or obtain equipment and supplies needed for each function, ensuring they correspond to client specifications.

Maintain an ongoing inventory of equipment, utensils, and props required for each function.

Conduct weekly walk-throughs of all function spaces for maintenance reports.

Organize training meetings and enforce hotel policies for staff; conduct monthly department meetings and type minutes for FBD and GM.

Participate in local and regional events.

Attend or schedule an assistant to attend weekly banquet event order meetings.

Prepare and present accurate function billing to clients and collect payments.

Work closely with Chef and kitchen staff to ensure efficient food preparation and service.

Direct and assist banquet staff during functions to ensure details are executed according to client specifications.

Conduct monthly emergency drills with staff.

Monitor cleanliness of function restrooms during events.

Secure final payment for events from clients.

Address safety issues, including training staff on safety protocols.

Ensure efficient staffing and stocking of banquet bars, maintaining cleanliness and proper cash register procedures.

Manage payroll, time cards, and distribution of banquet gratuities to staff.

Prerequisites:

Education: Two-year Associates degree or Bachelors degree preferred. Must be able to communicate effectively in the primary language(s) used in the workplace.

Experience: Must possess general knowledge of food & beverage service, generally with two years as a server, dining room manager, or host/hostess. Experience with current computer programs is desired.

Physical: Must have the ability to bend, squat, and frequently lift 25 pounds and occasionally 50 pounds. Requires well-paced mobility, manual dexterity, visual acuity, hearing, and excellent speaking ability.
