**Responsibilities**

Has thorough knowledge and is able to prep and prepare all menu items.

Is responsible for quality of products served.

Understand and complies consistently with our standard portion sizes, cooking methods, quality standards and policies and procedures.

Portions food products prior to cooking according to standard portion sizes and recipe specifications.

Maintains a clean and sanitary work station area. Follows all food safety, sanitation, and HACCP guidelines when preparing hot and cold foods.

Is responsible for having knowledge and understanding of all kitchen equipment (smoker, combi oven, broiler, sous vide equipment)

Reports equipment and food quality problems to supervisor in a timely manner.

Informs supervisor immediately of product shortages.

Uses standard recipe cards for preparing all products.

May be asked to follow proper plate presentation and garnish set up standards for all dishes.

Assists in all areas of food preparation and production as needed.

Opens and closes kitchen properly by following the established opening and closing checklists for kitchen stations.

Duties, responsibilities, requirements and expectations pertaining to this job are subject to change as needed.

Works days, nights, weekends, special events and holidays as needed.

Performs other duties as assigned.

**Qualifications**

Exceptional guest service skills required.

Good knife skills

Whole animal butchery

Familiar with modern cooking techniques (Sous vide, Combi oven, etc)

Comfortable with constructive criticism and willing to learn and grow.

A minimum of three years experience in kitchen preparation and cooking or equivalent combination of education, training and/or experience.

**Certificates, Licenses, Regulations**

Must be able to obtain and maintain a Class B gaming license from the Stillaguamish Tribal Gaming Agency and Washington State.

Must be able to obtain and maintain a Washington State Health Card (Food Worker Card).

**Physical Demands and Work Environment**

Constantly requires the ability to receive detailed information through oral and written communication. The position requires exerting up to 50 pounds of force occasionally, and/or up to 20 pounds of force frequently, and/or up to 10 pounds of force constantly to move objects. From time to time the position might require the lifting of full kegs of beer and moving those kegs to other areas. Requires repetitive movement with the ability to stand and/or walk for an entire shift. This is a 24 hour, 7 days a week work operation.
