The EDR Line Cook works directly with the EDR Lead Cook and the Sous Chef to plan and prepare high quality food to serve to employees in the Employee Dining Room (EDR) in accordance with all established guidelines and procedures, whether working the broiler, pantry, or line. The EDR Line Cook also helps the Cottonwood Kitchen staff prepare food orders for patrons of the Cottonwood Restaurant.
Essential Duties and Responsibilities:
* Ensures that his/her assigned workstation is clean, well-organized, and stocked appropriately for the shift and business levels.
* Works closely with the EDR Lead Cook to plan, prepare, cook, and serve employee meals.
* Adheres to all safety and sanitary requirements, including "clean as you go".
* Works as a team with Kitchen personnel assigned to other stations to ensure that all food meets WSCE standards for quality, preparation, temperature, and appearance.
* Adheres to proper storage and rotation procedures to ensure freshness and guard against spoilage and waste.
* Assists in preparations for banquets and special events.
* Performs all aspects of food preparation, including but not limited to roasting and broiling meats, preparing salads and vegetables, and preparing sauces. He/she must be proficient in cooking techniques including, but not limited to charbroiling, poaching, deep frying, pan frying, sautéing, roasting, griddling, and par-cooking.
* Recognizes high quality vegetables, fruits, fish, poultry, meat, and dairy products. Notifies the Lead EDR Cook or the Sous Chef of any food items that do not meet the established quality standards of Warm Springs Casino Enterprises.
* Ensures that all standards of sanitation, cleanliness, order, and safety are met in the Kitchen and all food storage facilities.
* Complies with all standards and regulations set by all pertinent regulatory agencies.
* Will perform other duties as assigned.
Qualifications
Education, Qualifications and Experience:
* Prior kitchen experience preferred.
* One (1) year of kitchen/cooking experience preferred, preferably in a casino environment.
* Food Handlers Certification required.

* Excellent communications skills are essential. This includes verbal, written and listening skills. Must be able to communicate effectively with all levels of personnel, management and guests while providing excellent service to internal and external customers. Must maintain strict confidentiality.
* Must establish and maintain excellent working relationships with coworkers on all levels.
* Must be able to analyze and solve complex problems that may have non-standard solutions.
* Skill in solving practical problems and dealing effectively with situations where only limited standardization exists.
* Proven innovation skills and creativity required.
Physical Demands:
* Lifting and carrying are required. Lifting items weighing as much as 60 pounds may be required.
* This position requires reaching, manipulating and manual dexterity when completing complex tasks.
* This position requires sitting, stooping, standing, bending, and walking.
* This position requires intense and exacting mental and visual attention.
Working Conditions:
* This position requires working in areas where the noise level is high, working with sharp objects and where there are high temperatures while performing intense, complex, and very involved tasks at a fast pace.
* Must observe and comply with all safety regulations and procedures, including the use of any and all safety equipment provided. Must practice safety at all times.
Special Requirements:
* Must submit to and pass a drug/alcohol screening test.
* Must submit to and pass an Oregon State background investigation.
* Proven gaming license eligibility preferred.
Hourly employee incentive: This an hourly paid position, it would qualify to additional pay (differential wage) based on hours worked outside the regular Monday-Friday 9m-5pm.
