1. Demonstrates competence in the performance of duties and responsibilities related to food production.
a. Performs all tasks according to job routine, in a time sensitive manner and within scheduled hours.
b. Practices portion control.
c. Follows written and verbal instructions.
d. Follows production sheets to ensure adequate production quantities for all meals and minimize waste.
e. Follows recipes accurately to meet quality standards and maximize customer satisfaction.
f. Contributes to production staff meetings on a regular basis and implements new changes/ideas (If did not attend meeting reads minutes.)
g. Utilizes leftovers efficiently and in a timely manner (by anticipating food expiration) to minimize waste.
h. Handles knives and operates all equipment in a safe manner.
2. Demonstrates competence in the performance of duties and responsibilities related to sanitation.
. Maintains all storage spaces, refrigerators and freezers as neat and organized.
a. Practices "Clean as you go."
b. Properly cleans and sanitizes all equipment used and incorporates cleaning into daily routine.
c. Complies with cleaning schedules and completes cleaning projects as assigned.
d. Uses and stores cleaning products safely and properly.
3. Demonstrates competence in the performance of duties and responsibilities related to HACCP/Food Safety.
. Completes annual HACCP training.
a. Observes and records temperature of refrigerators, freezers.
b. Ensures and records that food is cooked/served at minimal internal cooking/serving temperatures.
c. Rotates and discards food according to FIFO and prep date.
d. Practices time and temperature control in thawing and cooling.
e. Minimizes the potential for cross contamination.
f. Washes hands after every possible contamination.
g. Uses disposable gloves for ready to eat foods and changes them according to policy.
h. Meets department standards of personal hygiene.
i. Stores food properly: covered, labeled, dated and rotated, stored to prevent cross-contamination.
**Qualifications**
**Experience Minimum Required**
3 months food service experience
**Experience Preferred/Desired**
Grill and or Deli experience
**Education Minimum Required**
High School
**Education Preferred/Desired**
Vocation food service education.
**Special Skills Minimum Required**
Ability to read and extend recipes.
Deli and short order grill food preparation.
Works quickly.
Knowledgeable of food safety and sanitation.
**Licensure and/or Certifications Preferred/Desired**
