Sushi Chef responsibilities include handling a wide range of raw fish and other ingredients, managing food stock and working with an attention to detail to fulfill all orders within quality and health standards. To be successful in this role, you should have experience with Japanese cuisine and work well under pressure and maintain restaurant standards during busy periods.

Primary Duties: The following are examples only and are not intended to be all inclusive or restrictive; other duties may be assigned as necessary.

* Create a rich sushi menu with various main ingredients and raw fish (for example, salmon, tuna, unagi).

* Prepare all types of sushi, including maki, nigiri and sashimi according to established guidelines on quality, portion size, presentation, and food safety.

* Expertly cut, slice, and fillet different types of fish.

* Inspect the quality of fruits, vegetables, and fish used to prepare high-quality sushi dishes.

* Manage food prep activities.

* Coordinate with our wait staff to ensure proper cooking, considering special requests and food allergies.

* Regularly take inventory of food supplies and other products, place orders as needed.

* Maintain hygiene principles in all cooking areas and clean your space at the end of the shift.

* Maintain a clean work environment in order to prevent food contamination.

* Report any problems with kitchen equipment to the manager on duty.

Qualifications:

* Previous experience with sushi making and Japanese cuisine is highly preferred

* Ideal applicants will possess a passion for food, a high sense of urgency, and the ability to multitask.
