Utilize personal creative talent to create original, creative pastries, menu items, and displays including tarts, cookies, petits fours, chocolate creations and sugar sculptures. The Pastry Cook performs creative methods of cooking, baking and portion control.
QUALIFICATIONS
High school diploma or equivalent education
Culinary degree preferred or equivalent training
Thorough knowledge of pastry methods, basic culinary operations and safe food handling procedures as would normally be acquired through at least two years of similar experience or culinary trades training
RESPONSIBILITIES/DUTIES
Create & prepare specialty baked goods and confections for a la carte, buffets, special events and banquets. Alter recipes as needed to accommodate special diets
Design plating presentations for all baked goods and confections
Maintain high standards of quality of food production to ensure member/guest satisfaction by maintaining adequate inventory levels to support ala carte, special events and banquets
Work with Executive Chef and/or Pastry Chef to develop cost effective baked goods, pastry and dessert menu specials and standard recipes while maintaining quality
Assist Executive Chef and/or Pastry Chef in developing and maintaining the marketing and promotional programs as they relate to the pastry departments
Ensure high standards of sanitation and cleanliness are maintained throughout the kitchen and dumpster areas at all times. Keep all cooking equipment clean during the assigned shift, making sure that all cooking equipment is cleaned prior to the change of shift
Receive and store provisions and supplies according to accepted practices, issue supplies from storage per requisition
Perform cooking and baking procedures as required to fulfill tasks assigned by Executive Chef and/or Pastry Chef including portion control of breads, doughs, batters, desserts, ice creams, and fruits using devices including scales and dishers
Perform special preparation techniques including slicing, melting, sculpting, molding, decorating, frying using specialty knives and mechanical devices such as chocolate warmers, sugar blow torches, cake air brushing machines, pastry bags & tips, mandolines and specialty cutters & molds
Setup, operate, breakdown and clean slicers, mixers, food processors, grinders, ovens, ranges, broilers, line refrigeration, braisers, and kettles as necessary
Select proper equipment and perform culinary functions of baking, braising, sauté', broiling, poaching, searing, grilling, boiling, basting, proofing, kneading, sheeting, folding, and blending
Operate within all established guidelines, policies, standards and constraints as set by PGA TOUR Golf Course Properties, Inc
