**Job Details**
We are looking for a Porter/Prep Cook to build our team at our SEASONAL summer restaurant in the Hamptons.

**Essential Duties**:

- Responsible for the preparation of all proteins, vegetables, sauces, etc. for hotline and sushi.
- Reviews prep list daily and completes all prep required according to specifications provided by the chef.
- Ensures kitchen prep area, dish pit, and refrigerators are kept clean and organized at all times.
- Ensures proper labels are made for all protein and vegetables prior to service.
- Oversees first in/first out process to ensure items are utilized before their expiration date.
- Receives, inspects, and puts away items when they are received.
- Prepares sushi rice according to recipe guidelines.
- Ensures temperature logs are up-to-date and all refrigerators are operating properly.
- Fabricates fish and other proteins; and ensures consistency and exact weight with good shape and thickness for preparation. Practice proper maintenance and sanitation of all essential tools.

**Qualifications**:

- Ability to satisfactorily communicate in English (speak, read, write) with co-workers and management.
- Ability to perform assigned duties with attention to detail, speed, accuracy, follow-through, courtesy, cooperativeness and work with a minimum amount of supervision.
- Ability to accurately follow established recipe and technique guidelines.
- Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists.
- Ability to work well under pressure and handle multiple tasks at once.
- Ability to be well organized, maintain concentration, and think clearly while providing service to many guests at any given time.
- Punctuality and regular and reliable attendance. Interpersonal skills and the ability to work well with co-workers

**Experience**:
Previous Prep Cook experience is preferred, though any combination of education and experience that provides the required knowledge, skill and ability will also be considered.
