The purpose of this position is to implement and maintain effective, efficient systems to operate the dietary department and provide food service to residents in a cost-effective, efficient manner to safely meet residents’ needs in compliance with federal, state and local requirements.

**RESPONSIBILITIES AND DUTIES**:

- Demonstrate knowledge and understanding of the facility philosophy, policies and procedures and adhere to them.
- Revise and implement dietary policies and procedures as needed.
- Assist in planning and implement diets and menus for residents in coordination with dietician.
- Implement the dietary component of residents’ assessments and care plans.
- Maintain records of residents’ profiles, meal census, menus, diet cardex, diet roster, diets served and purchase records.
- Maintain menus for required retention period.
- Purchase or requisition food and supplies.
- Supervise the receiving and storage of food.
- Implement a system to supervise food preparation, service and storage to ensure quality assurance as it relates to facility standards and state and federal requirements.
- Maintain file of standardized recipes.
- Participate in the selection and termination of dietary employees.
- Schedule all employees according to the amount of budgeted hours for the department.
- Complete performance evaluations timely and accurately for all dietary employees at the end of the probationary period and annually.
- Plan and conduct dietary related in-service training program for the department as scheduled and required.
- Be responsible for communicating pertinent information to dietary employees.
- Prepare and maintain work and cleaning schedules. Maintain cleaning schedule logs accurately and timely to include cleaning of milk boxes, all refrigerators, ice machine, juice dispenser, storage racks, exhaust vents and hood system.
- Maintain all logs related to the dietary department as required by the facility and State and Federal regulation accurately and timely to include audit of safe handling of baked items, dishwasher temperatures and audit of proper tray set-up.
- Assume responsibility for compliance with sanitation requirements.
- Ensure proper maintenance of equipment.
- Maintain food and labor costs within the dietary budget.
- Work with Administration and the Activity Department to plan menus and provide special foods for parties and/or other scheduled programs.
- Plan food substitutions for residents who refuse or are unable to eat food served.
- Be responsible for the safety of residents under his/her dietary supervision.
- Communicate and work cooperatively with facility vendors, suppliers and contractors.
- Serve on the Quality Assurance Committee and actively participate in the Quarterly QA meetings. Prepare and submit QA report accurately and timely
- Participate in other facility meetings, i.e. Department Head, General Staff, Safety.
- Attend all facility in-services as assigned and required.
- Observe all facility policies and procedures to include Resident Rights, safety and infection control.
- Assist with inspections performed by regulatory agencies, as assigned.
- Perform all other related duties assigned in an effective, timely, cooperative and professional manner as directed.
- Asseme accountability for all data contained in the employees’ handbook.
- Accept constructive criticism and utilize it to improve performance.
- Come to work in neat, clean attire and consistently present an appropriate professional appearance.
- Come to work as scheduled and consistently demonstrate dependability and punctuality.
- Completes “Administrator on Duty (AOD)” days as assigned and required.
- Consistently work cooperatively with residents, residents’ representatives, facility staff, physicians, consultants and ancillary service providers.

Pay: $40,000.00 - $65,000.00 per year
