Check out this video for more information on our great company Location Description: Lake Arrowhead Resort and Spa is nestled high atop the majestic San Bernardino Mountains at an elevation of 5,174’. This Resort is surrounded by an ocean of Ponderosa Pines and gives guests exclusive access to Lake Arrowhead, a reservoir with a surface area of 780 acres. Lake Arrowhead is the perfect location for outdoor adventure enthusiasts and offers a variety of summertime and wintertime activities including hiking, mountain biking, fishing, kayaking, water skiing, snowboarding, snowshoeing, ziplining, and more. The resort includes a Bar & Restaurant, Spa & Wellness Center, Outdoor Pool & Lake Beach as well as over 23,000 sq. ft of meeting and events space. Overview:
**Basic Function**

The Night Porter position ensures the kitchen is clean and orderly. Supports the restaurant and kitchen team by maintaining a clean and hygienic kitchen environment and ensuring all kitchen equipment is in good working condition.

**Essential Functions**
- Deep cleans all kitchen equipment as specified.
- Ensures all kitchen equipment is clean and ready for use.
- Cleans, sanitizes, and polishes all stainless-steel surfaces, such as preparation tables, shelves, sinks, walls, cooler doors, etc.
- Ensures all kitchen floors and walls are scrubbed, sanitized, and dried.
- Reports all suspected malfunctions of kitchen equipment to supervisor or manager through passalongs.
- Breaks down boxes and removes garbage from the kitchen and places in the designated dumpsters.
- Maintains cleanliness and organization in the kitchen, including storage areas and equipment.
- Monitors the needs and cleanliness of the Employee Dining Room (EDR).
- Organizes and stores all items and chemicals in their appropriate location.
- Cleans, sanitizes, and maintains dishwashing machines, ovens, grills, char-grills, sauté range, fryers, hood filters, hood canopies, salamanders, slicers, mixers, blenders, and any other items defined by a manager or supervisor as kitchen equipment.
- Reports equipment malfunctions to manager on duty.
- Monitors cleaning and sanitizing standards per Health Department.
- Maintains a clean work area and kitchen by frequently sweeping, mopping, and deck scrubbing high traffic floors, stairs, prep, cooking, storage, dish pit areas, and includes cleaning any other areas within the hotel, as assigned.
- Ensures all prep stations and equipment are cleaned and sanitized.
- Ensures the trash compactor and disposal areas are always clean and free of clutter.
- Cleans compactor area is pressure washed at least once monthly, or as instructed.
- Provides a passalong (completed checklist, cleaning/chemical supplies order, and equipment maintenance record) to the opening manager or supervisor.

**Marginal Functions**

Qualifications:

- High school diploma or equivalent.
- 1 year of kitchen equipment cleaning experience in a hospitality or restaurant industry.
- Food Handler’s Certificate required or must be obtained within 30 days of employment.
- Experience with use of dishwashing and cleaning chemicals according to health department standards, preferred.
- Must be able to adhere to health code standards.
- Ability to effectively manage time to complete job duties in a timely manner.
- Must be able to work independently.
- Must excel in time management and keeping on task.
- Good organizational, communication, and collaboration skills.
- Must speak, understand, and follow directions in English.
- Must be able to work various shifts, including overnights, evenings, weekends, holidays, and overtime, as required.
- Must maintain a neat, clean, and well-groomed appearance.
