**THE JOB**:
As a **Lead Kitchen Worker,** you will be responsible for maintaining the cleanliness of the dishes, glassware, flatware and the dish area. You will also set the stage for guest experience with your welcoming smile and service. By understanding their unique stories and needs, you will own their experience to create **WOW **memories they will carry with them far and beyond their stay with us.

**THE DAY-TO-DAY**:

- Breakdown, load, unload, catch, and properly sort dishes, glassware and flatware.
- Load dishwashing solution into automatic dispenser and regulate the output of detergent and chemicals to the dish washing machine by monitoring and adjusting controls.
- Unload clean dishes from rack after being processed through dish machine.
- Polish silver, copper, and brass in all areas, as needed.
- Sweep and mop floors and wash floor mats.
- Separate and remove trash, garbage and place in designated containers.
- Ensure guest safety by following proper food handling and sanitation procedures.

**PRIMARY PURPOSE**:
As a Lead Kitchen Worker, you will be responsible for maintaining the cleanliness of the dishes, glassware, flatware and the dish area. You will also set the stage for guest experience with your welcoming smile and service. **PRINCIPAL DUTIES AND RESPONSIBILITIES**:

- Remove washed dinnerware, flatware, and glassware from dishwasher and stack them according to size and likeness for future use, return items not satisfactorily cleaned for a second wash
- Maintain cleanliness and organization of supply/storage closets; remove trash, wipe down shelf and counter; clean floor, remove items which do not belong and place in correct area
- Receive soiled dinnerware, flatware, and glassware, sort items according to size and likeness
- Sweep and mop kitchen floor, scrub the wall and trashcan, pick up trash in assigned area and clean floor mat
- Check the condition of the dishwasher machine in accordance with specifications
- Change dishwasher machine water and filter, refill as specified to ensure wares are properly cleaned
- Maintain cleanliness and working condition of garbage disposal
- Transport garbage container from kitchen and work area to dumpster; empty and clean
- Perform other job-related duties as requested

**KNOWLEDGE, SKILLS, AND ABILITIES**:

- Working knowledge of industrial dish/glass washer, mop, broom, large garbage cans, general kitchen equipment, rubber gloves and plastic smocks
- Working knowledge of cleaning dishes and kitchenware
- Ability to lead and mentor a team
- Knowledge of health, safety and sanitation regulations
- Excellent customer service skills and interpersonal skills to effectively communicate with all business contacts

**MINIMUM REQUIREMENTS**:

- High school diploma or equivalent
- Work varied shifts, to include weekends and holidays

**PREFERRED**:

- Two (2) years of experience as a kitchen worker in a similar high-volume environment
- Lead or supervisory experience
- Experience working in a similar resort setting
