Madruga Bakery, a James Beard nominated, well-loved neighborhood retail bakery in Miami, FL is hiring a Production Manager. We are seeking an experienced individual with the knowledge and leadership skills to oversee the baking team. We are a retail only bakery, producing artisan bread, croissants, and rustic breakfast and dessert pastries in small batches, baked fresh daily. We mill whole grains in house, using fresh whole wheat flours in a number of our products. We strive to use the highest quality, whole ingredients in all of our products.

Summary of Responsibilities:
Manage Employees & Production
- Manage a team of 8-10 employees in pastry and bread production
- Hire, train, and develop staff as bakers and team members
- Assess and direct production numbers based on sales
- Update par sheets, prep lists, and recipes as needed
- Lead staff in daily production through prep sheets, guidance, and product knowledge
- Ensure quality and consistency standards are met daily

Hands-on Production
- Participate in daily production of bread and pastry
- Train and guide team on recipes, controlling for product quality and correct technique
- Develop new recipes seasonally

Ordering and Procurement
- Conduct inventory and order products as needed
- Create relationships with vendors and improve procurement
- Oversee organized system for receiving and managing inventory

Leadership
- Lead by example in work ethic, attitude, communication, and energy
- Solve problems; use creativity and innovation to create improved practices and solutions
- Work successfully through high pressure situations
- Collaborate creatively with owners and other managers to work towards constant success
- Previous professional baking and management experience
- Enjoys being in a hands-on leadership role
- Excellent attendance and time management skills
- Great sanitation practices
- High sense of of ownership in work
- Constantly motivated to produce the highest quality products
- Great written and oral skills; Able to use Excel

Pay: From $70,000.00 per year
