**_Job Summary:_**

**_Job Responsibilities:_**
- Perform daily Pre-Operational Inspection of equipment before starting daily operations
- To ensure compliance to USDA Standards and Regulations.
- HACCP: Collecting data and documentation for HACCP Program, CCP Checks.
- Verify processing records, Batch cards documentation, Critical Control Point Records.
- Ensures Quality Standards are followed when product is processed and packed.
- Assurance of GMP's and food safety standards are followed throughout the entire process.
- Tag equipment that has failed inspection and communicate issues to Production Supervisor.
- Perform quality checks: date and label check, tool checks, weight Control, labeling, etc.
- Sanitation Report (GSR), Monthly Sanitation Program and their follow-up and completing dates.
- Maintain Environmental swabbing program and collect environmental samples weekly of locations randomly according to schedule.
- Maintain Records and documentation for Company and USDA
- Prepare Micro-Lab Samples and Request paperwork for micro-lab samples Collected for outside lab testing.
- Accomplish the daily production requirements in a timely and efficient manner
- Follow policies and procedures in HR, Safety and GMP
- Follow the Retain sample program established for each product produced.
- Maintain Records and documentation for Retain Samples and R&D.
- Communicate with Sanitation Department for any issues found in the Pre-Op inspections and document proper corrective actions when deficiencies are found.
- Other duties as assigned.

**_Education and Experience:_**
- High School Diploma or GED required.

**_Physical Requirements: _**
- Moderate degree of physical activity on a frequent basis
- Constant rotation of job duties every couple hours
- Must be able to lift 25 lbs.
- Repetitive standing, walking, bending, twisting, stooping, grasping, climbing, reaching, and moving about the facility
- Hearing ability to meet manufacturing facility safety requirements
- Works in high noise area and wears the appropriate hearing protection
- Vision abilities include close, distance, peripheral, and depth perception
- Able to work a multi shift environment
- Will be required to work around spices and meat ingredients as part of the daily activities
- Exposed to cold (40º)/ heat/ humidity
