Position Title: Dishwasher / Steward
Reports To: Executive Chef / and or Food & Beverage Manager
Department: Food & Beverage
**POTITION PURPOSE**
The Steward performs the cleaning and sanitation of all kitchen utensils, cookware, dishes, glasses, silverware and serving dishes. This position safely operates dish machines, disposals and other kitchen equipment. Stewards maintains cleanliness of work areas, floors, walls, remove and sort trash, and recycling, sort and store dishes, glassware, pot ware, and silverware.
Duties include but are not limited to:
**ESSENTIAL DUTIES AND RESPONSIBILITIES**
- Properly fill and maintain the dish machine according to manufactures standards. Maintain cleanliness standards of machine according to health department guidelines.
- Receive, scrape, rinse and rack dishes and utensils.
- Unload dish machine, stack, store and returns dishes and utensils to the proper areas in both the kitchen and other food service facilities in the hotel.
- Empty trash bins in dish area and throughout the kitchen as needed and maintain dumpster area.
- Maintain dish area including floors, walls and counter areas according to hotel standards and health department guidelines.
- Sweep and mop floors.
- Clean and replace floor mats.
**OTHER**
- Due to the cyclical nature of the hospitality industry, employees may be required to work varying schedules to reflect the business needs of the hotel. In addition, attendance at all scheduled training sessions and meetings is required.
**SUPPORTIVE FUNCTIONS**:
- In addition to performance of the essential functions, this position may be required to perform a combination of the following supportive functions, with the percentage of time performing each function to be solely determined by the supervisor based upon the particular requirements of the hotel.
- Perform any general cleaning tasks using standard hotel cleaning products as assigned by supervisor to adhere to health standards.
- Wipe down counter tops and preparation areas in order to maintain a clean, efficient operation.
- Restock area with required supplies.
- Handle cleaning chemicals according to prescribed safety standards. Practice good safety habits with chemicals, wet floors and other slip and fall hazards throughout kitchen.
- Assists with the lifting and moving of food carts, dish storage racks and other kitchen equipment as directed by supervisor.
**SPECIFIC JOB KNOWLEDGE, SKILLS AND ABILITIES**
- The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job, with or without reasonable accommodation, using some other combination of knowledge, skills and abilities.
- Must be able to speak, read, write and understand the primary language(s) used in the workplace.
- Must be able to exert well-paced ability in limited space and to reach other departments of the hotel on a timely basis.
- Ability to remain calm under stress. Fast paced work area with considerable noise and frequent interruptions. Work area may be confining.
- Must possess basic computational skills.
**WORKING ENVIRONMENT / PHYSICAL DEMANDS**
- Inside with protection from weather but not necessarily changes in temperature. Extremes in temperature are possible. Work area may be extremely hot and humid. Floors may be wet and slippery. Temperatures may vary through areas of the kitchen including extreme cold in walk in coolers and freezers.
- Prolonged standing, walking, lifting and carrying throughout entire shift.
- Must have vision ability to see small objects at arm’s length, to read meters and controls.
- Must have finger, hand and upper body dexterity to grasp dishes, push, pull, carry and lift racks, carts, and large trash bins.
- Must be able to lift, push, pull and carry up to 50 lbs. to include serving trays, carts, tables, chairs, and small equipment.
- Must be able to push and pull carts and equipment weighing up to 250 lbs. occasionally.
- Physical activities include talking, seeing, hearing, touching, bending, grasping, pushing, pulling, bending, stooping, crouching, crawling, stretching, lifting, carrying, reaching, holding.
- Requires manual dexterity to use and operate all necessary equipment.
**QUALIFICATION STANDARDS**
**Education**
High school diploma or equivalent education preferred.
**Experience**
Dishwasher/Steward experience preferred.
**Licenses or Certificates**
Ability to obtain and/or maintain any government required licenses, certificates or permits.
**Grooming**
All employees must maintain a neat, clean and well-groomed appearance per company and brand standards
