Kettle Range Meat Company is an independently owned butcher shop and specialty food store focused on locally raised, locally processed farm-to-table meats with locations in Milwaukee and Elm Grove.

Our company is growing and we're looking for a Head Butcher/Meat Manager to lead our small team of butchers and meat cutters.

You should have leadership skills, prior management experience and be well-versed in whole animal butchery and traditional meat crafting.

As a Kettle Range butcher, you will be working with whole carcass and primal cuts of premium, locally raised and locally processed grass fed and pastured meats, including beef, pork, lamb and chicken to create retail cuts, sausage and value-added specials for the most beautiful and innovative retail meat case in the Midwest.

Job Functions:

- Manage a small team of butchers and meat cutters, including training, scheduling, work assignments and performance evaluations.
- Plan purchasing and utilization to maximize profitability, rotating inventory and maintaining product freshness.
- Prepare fresh sausage, marinades, smoked and cured items, and other value-added meat products.
- Provide friendly, knowledgeable customer service.
- Educate customers about the meat, meat preparation, and the health and environmental advantages of sourcing from ethical and sustainablity-focused local farms.

Qualifications:

- 5 or more years of butchery/meat cutting experience.
- 2-3 years of management experience.
- Excellent customer service skills.
- Experience breaking whole carcass beef, pork and lamb.
- Knife skills.
- Math/analytical skills.
- Can stand for 8-10 hours..
- Can lift up to 50 lbs.
- Open availability (week days and weekends).
- Team oriented.
- Passionate about butchery.

You will be the face of our shop and the star of the show. More than just a butcher, you will be an ambassador for healthy, humanely and sustainably raised, locally sourced meat. You should be able to teach our customers about our farmers and the animals they supply, show them the advantages (and challenges) of whole animal butchery, and inspire them to try unfamiliar cuts or new methods of preparation.

You should have deep experience cutting, trimming, tying, grinding, maintaining an attractive meat case, filling custom orders, and managing inventory. But more than that, you should have a vision for creating an exciting, gourmet, specialty food experience for our customers.

This position is suitable for a senior butcher with advanced skills who is ready to take the helm and steer.

Pay: $20.00 - $30.00 per hour
