The Cleveland Yachting Club in Rocky River is currently seeking an experienced sous chef to serve as the direct assistant to the Executive Chef of the kitchen. The ideal candidate will assist the Executive Chef in supervising food production for all food outlets, banquet events, and other functions of the club. Duties will also include supervision of all food production personnel, assisting with food production tasks as needed, and assuring that quality and cost standards are consistently met. JOB TASKS: Maintain how food is presented and recipes are followed as determined by the Chef Inspect supplies, equipment, and work areas to ensure conformance to established standards Instruct cooks and other staff in the preparation, cooking, garnishing, and presentation of food Expedite food when possible and maintain acceptable ticket times Monitor sanitation practices to ensure that employees follow standards and regulations Requisition food and other supplies needed to ensure efficient ala carte and banquet services Assist in creation of new menu items and club functions Arrange for equipment repairs as needed Supervise and coordinate activities of cooks in food preparation to Chef's specifications Check the quality of raw and cooked food products to ensure standards are met (Label-Date-Rotate) Check quantity and quality of prepared line items Demonstrate new cooking techniques to staff Ensure proper cleanliness and breakdown of equipment of cooks and dishwashers at night's end Be mindful of staff labor hours/clock out procedures All other duties set forth by the Executive Chef and Club Management Salary based on experience level. Minimum 5 years experience cooking in a fine dining/country club setting preferred.
