Job DescriptionPosition SummaryThe Sous Chef works closely with the Chef de Cuisine to create and execute outstanding food that shows the wines well. They are responsible for various kitchen duties including food and meal preparation, execution of service, and cleaning tasks as assigned. Oversee and responsible for kitchen staff scheduling and management.ResponsibilitiesProvide food preparation duties as assigned by Chef de Cuisine (CDC)Assist with delivery and/or pickup of food/event supplies as neededMaintain recipes and menus to be served to hospitality guests and at events as assigned by Winery ChefDirect and support and review staff with KPIs and performancePartner with HR with any employee issues or concernsRegularly develop, test, and implement new recipes to pair with The Prisoner Wine Company (TPWC) wines.Provide dishwashing and kitchen cleaning duties as assigned by CDCInventory kitchen supplies on a monthly basisEnsures kitchen is maintained at a safety and health standard consistent with the standard of TPWC.Assist with setting up and breaking down of meal service, tastings, and eventsAssist with stocking of wines at all venuesAssist with cleaning projects as assignedAssist other Constellation Brands properties as requiredAssist in supervising temporary or on-call kitchen Help in the absence of the CDCMinimum QualificationsMinimum 2 years’ experience in a professional kitchen  Degree from an established Culinary Academy recommendedCurrent Food Handlers or ServSafe CertificateMust have culinary skillsMust know and understand meal preparation with regard to timing and logisticsSolid organizational and time management skillsMust make decisions with good judgment and maturityEffective written and verbal English skillsMust have knowledge of state and federal laws concerning safety, sanitation, and cross-contamination and must abide by these lawsMust be creative and motivated about food and wine pairingsPhysical Requirements/Work EnvironmentAble to work in a standing position for long periods of timeMust have a valid California Driver’s License with clean driving recordMust be 21 years of ageAbility and desire to work extended hours of operationMust be willing to work evenings, weekends, holidaysAble to lift 45lbsThe above information is representative of the work performed in this position; however it is not all-inclusive.  The omission of a specific duty or responsibility does not exclude it from the position if the work is similar or related to the essential duties and responsibilities.LocationSt. Helena, CaliforniaAdditional LocationsJob TypeFull timeJob AreaHospitality & RetailThe salary range for this role is:$26.05 - $40.74This is the lowest to highest salary we in good faith believe we would pay for this role at the time of this posting.  Our compensation is based on cost of labor. For remote locations or positions open to multiple locations, the pay range may reflect several US geographic markets, including the lowest geographic market minimum to the highest geographic market maximum. We may ultimately pay more or less than the posted range, and the range may be modified in the future.
