Responsibilities Plan, manage, and coordinate the dining services department's activities, ensuring quality service for residents and employees. Establish standards for the organization and supervision of dining services. Maintain quality dining services within budgetary constraints. Calculate food requirements, create menus, and control food costs; may involve meal preparation. Oversee meal preparation to ensure compliance with company standards. Conduct inspections of all relevant areas to ensure adherence to food safety and sanitation regulations. Prepare cleaning schedules, production worksheets, and staff schedules. Maintain an inventory of food and supplies. Recruit, orient, and train new staff, while effectively delegating tasks to ensure smooth operations. Develop and manage a cost control system; prepare and submit the departmental budget. Provide nutrition education and counsel residents; offer training sessions for dining services staff. Ensure adherence to safe work procedures, particularly regarding employee safety and infection control. Implement a continuous quality improvement program with necessary follow-ups. Qualifications Education and Experience A high school diploma or GED is required, along with two to four years of experience in a commercial kitchen, including operation and line cooking, or a combination of education and experience. Certifications, Licenses, and Special Requirements A current ServSafe Certification is required; state food service certification may be necessary. ACF Certified Sous Chef (CSC) is preferred. Management/Decision Making Utilize existing guidelines and procedures to make decisions that vary within the department, applying judgment and experience to resolve moderately complex issues based on established precedents. Knowledge and Skills Strong knowledge of culinary skills and an understanding of the organization and work environment are crucial. Familiarity with Microsoft software is preferred, and basic typing skills are necessary. Comprehensive knowledge of food safety, sanitation practices, culinary nutrition, and supervisory management is essential.
