POSITION SUMMARY

The Lead Line Cook in the kitchen assists in all details of running the kitchen. The Lead Line Cook coordinates and ensures that all meals are prepared, cooked, and served in accordance with Messina Hofs recipes so that food quality requirements are met and maintained.

Essential Functions Statement(s)
  • Maintains inventory (keeping accurate inventory of on-hand items, ordering, and receiving product)
  • Assist with monthly inventory reconciliations and maintenance of low amount of waste
  • Establish and maintain vendor relationships
  • Attend weekly meetings set by Chef for Front of House and weekly Safety Meetings
  • Maintain overall cleanliness of kitchen and safety procedures (to include monthly safety inspections and first aid kit inventory)
  • Preparation of meals, banquets, and catering
  • Kitchen set up - opening & closing procedures
  • Properly execute food for Restaurant and all events
  • Assist with maintaining required labor and food costs within budget
  • Ensure all food production meets the standards set by Messina Hof Chef (including plate presentation, portion control, etc.) and ensure all recipes and standard operating procedures set by Messina Hof are followed
  • Perform other duties as required including assisting other departments as needed
Qualifications

POSITION QUALIFICATIONS

  • Related degree and/or 1-3 years of related experience
  • Ability to use a personal computer
  • Previous kitchen management experience preferred
  • Ability to use kitchen equipment safely
  • Ability to read and follow a recipe
  • Need to have active TABC and Food Handlers Certificate

PHYSICAL DEMANDS

The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job. While performing the duties of this job the employee is regularly required to talk or hear. The employee is frequently required to stand and walk for long periods of time. The employee is occasionally required to reach with hands and arms and stoop, kneel, and crouch. The employee must frequently lift and/or move up to 50 pounds from floor to waist. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus.
