Description

As a Sushi Chef, a typical day might include the following:
  • Creating high quality sushi dishes including preparing sashimi and nigiri, rolling maki, temperature recording, cutting and packaging for take-out and dine-in plate preparation
  • Working with the executive chef on menu development
  • Training, managing and overseeing the hourly sushi team members
  • Portioning food products and preparing dishes according to standard portion sizes and recipe specifications
  • Following proper plate presentation and garnishing set up for all dishes
  • Organizing and sanitizing kitchen and storage areas
  • Working in a high-volume, fast-paced work environment
  • Other duties as assigned
Requirements

This job might be for you if you demonstrate the following abilities and meet the following qualifications:
  • You have at least 2 years direct sushi chef experience in an upscale, high volume sushi restaurant
  • You are able to pass the Encore badging process
  • You present a neat and professional appearance
  • You are able to work in a high-volume, fast-paced work environment
  • You have understanding and knowledge to properly use and maintain all equipment in station
  • You have the ability to work at efficient and consistent pace
  • You are able to communicate effectively and accurately with co-workers
  • You are able to demonstrate teamwork with other staff members
  • You have flexibility with schedule which includes nights, weekends and holidays
  • You are able to work on your feet for extended periods of time
  • You are able to lift up to 30 lbs
Additional Experience Required:
  • ServSafe/Food Safety Certification
